Welcome to "On The Road Edition" with host Stevie Kim. She is in Napoli, continuing her conversation with Ristorante Salvo owner Salvatore Salvo, as well as with Luciano Pignataro over a Pizza Cosacca - one of the most famous pizza's - and well worth the journey!  The Salvo's have the ultimate pizzeria on Riviera di Chiaia; trained by father Giuseppe, guests can expect pliable dough and excellent toppings, plus a lot more cheese than the average pie found in Italy.  Built on values including passion and technique, their crust is flecked with char atop tiny bubbles supporting the best ingredients, one of Salvo's most popular pizza is their Margherita made with canned Piennolo tomatoes, the brisk acidity is balanced out by plenty of Fior di Latte while "Pizza 'Nduja e Verzin" weighs in even heavier thanks to spicy Calabrian sausage and blue cheese. For the Salvos, neapolitan pizza is a culture to be safeguarded and developed, using all the tools, techniques and knowledge that the world of contemporary gastronomy can offer. Salvatore Salvo and his brother Francesco have been passionately dedicating themselves to their work for years to carry on a tradition that has been handed down for three generations. Consequently, the neapolitan pizza Salvo is modern, adapted to the advancement of new discoveries in the kitchen, created according to seasonality and the raw materials at hand, enhanced by combinations of refined and carefully studied ingredients, it is Neapolitan pizza today.
