How can you tell if meat is BIO?
As with all other foods, the label should display the little leaf symbol with stars on a bright green background somewhere. In Italy, many practice Bio but do not have the entire supply chain certified or have not completed the bureaucratic process to obtain the certification to display the label. This is a fairly common case, but at least a declaration of a conversion period is necessary, or you must rely on trust.
How can you tell if a product is Gluten Free?
This is an increasingly recurring question. But how can we protect those who really need it? There should be a symbol with the wheat symbol and a diagonal prohibition line. However, legislation often allows for the writing gluten free, and we see many interpretations of this. Always ask for certification from the production laboratory that declares the product is
gluten free according to the law. Do not trust those who do not provide this minimum guarantee.
And for everything else?
As if the world of cured meats had lost all additives. Yet they are still present in large quantities. It is up to us to check the label and verify the absence of nitrates, colorants, or worse. In short, even those selling at markets should have a list of ingredients by now!
