We probably shouldn't even call it a trend but rather a raise of awareness and attention to consumption. Yes, because over the past year, the consumption and demand for pasta and semolina made from Senatore Cappelli wheat have tripled, and its rise shows no signs of slowing down.
But who was this Senatore Cappelli? There are still several "undecided" searches between Senatore Cappelli and Senatore Cappello, but... Raffaele Cappelli was a senator of the Kingdom of Italy who initiated the Apulian agrarian revolution by supporting a Marchigian geneticist, Nazzareno Strampelli, who dedicated his life to researching quality wheat varieties resilient enough to support their production even in the most challenging areas of West Africa.
The wheat proposed by Strampelli was tall and late-maturing, highly adaptable and resilient even in unfavorable environmental conditions. It is very rustic wheat of excellent quality, with an unmistakable flavor.
Strampelli dedicated his discovery to Senator Cappelli, who supported his studies. Today, that wheat is grown in Apulia, Basilicata, Calabria, Sardinia, and is used for high-quality pasta as well as for excellent bread and pizza.
We at Spaghetti & Mandolino offer you two different pasta producers using Senatore Cappelli wheat: the famous Felicetti pasta factory and a Marchigian family named Columbro, which has been producing high-quality wheat with protective methods since 1972.
The Senatore Cappelli pasta has a much more pronounced flavor than other types and holds up very well during cooking. It is excellent for large dishes with meat and fish sauces, particularly for Venetian-style shellfish and mollusks.
