A new Igp is born for cold cuts in Italy, adding to the already numerous existing ones.
Our country holds the largest number of certifications for this type of product in Europe. Piedmont, in particular, has always stood out for its dynamism in protecting agri-food specificity.
The Salame Piemonte will be the fortieth IGP. A product that has reached this milestone after a year from its presentation to the Ministry of Agricultural Policies.
What is the peculiarity of this cold cut? The presence of typical red wine from Piedmont such as Nebbiolo, Barbera, and Dolcetto. Its shape is cylindrical, with slices of bright red color leaning towards ruby. The fatty part is particularly interspersed with long and compact pieces. The cold cut contains garlic according to the ancient Piedmontese tradition, and this sensation gently emerges from the product along with a pleasant wine-like note.
It is not a dry cold cut but tends to remain soft and creamy on the palate. In the mixture, there is not only pepper as a spice but also cloves and nutmeg, which uniquely characterize the final flavor perception. The best bread for its tasting? The Biova bread from Piedmont, a very soft white bread.
