Maybe a bit smaller than those we are used to seeing on supermarket shelves. But we are not in California here!
The walnuts from the Valle Varaita come from ancient walnut trees mixed with chestnut and hazel trees. An ancestral ecosystem that has remained unchanged for centuries and still sustains itself today without treatments, relying only on the climate and the seasons.
This valley, unknown to most, boasts a great purity of the environment along a crystal-clear stream. The walnuts are very sweet and ideal for making desserts and pairing with blue cheeses or particularly aged ones, with a lovely aftertaste of dried fruit. For example, some excellent caciocavallo podolico from central-southern Italy or Castelmagno blue cheese in the pure Piedmontese style of the malghe in Valle Grana.
They are extraordinary walnuts for caramel crunch and for pestos to enjoy with Gragnano pasta or egg tagliatelle, according to the Piedmontese tradition.
