Spaghetti & Mandolino will start offering you selected boards of Italian cheeses in this first year of our website.
This choice comes after the great success we have had with the sale of portioned cheeses of all various types, from the most important ones, such as Parmigiano Reggiano DOP, to the small cheeses of Italian shepherds among high pastures and uncontaminated fields.

We are increasing the availability of cheeses, and soon there will be a great novelty with one of the most renowned Italian affineurs, loved by renowned star chefs.
We invite you to get closer to the world of cheeses through the board.

Bernardo Pasquali, our selector, ONAF Master Taster of Cheeses and promoter of the white magic of cheese, will guide you in creating small tasting paths through the magical world of cheese.
Small journeys through pastures, dairies, and thoughts of small great men who tried to interpret the territory through milk. Goats, cows, and sheep will be presented through small pieces of goodness. We will help you understand the meaning of the verticals of taste within different types of products, for example blue cheeses, raw milk, aging of mountain cheeses, and various interpretations of stretched curd.

Tasting cheeses using the raggera technique means having fun while learning about this beautiful world of the most authentic taste. Bernardo will explain to you the succession of cheeses, the characteristics of each individual product, and most importantly, he will tell you how to cut the cheese and present it to the diner so that it is representative of a tasting piece.

In short, we teach you to show off for those who have some top evenings, or to immerse yourself in the conscious pleasure of pairing honey, jams, mustards, and other delicacies that you can find in our Spaghetti & Mandolino. Stay Tuned!
