What is alpine cheese or malga cheese?

The alpine pastures especially host cattle, which live in privileged environmental conditions: the quality of the air and sunlight, the green mountain pastures, and the activities that keep them in perfect health ensure that mountain cattle grow healthy, fully in touch with the green and immersed in their nature.
 

What are mountain cheeses?

It is in these contexts, in these particularly favorable places, that the mountain cheeses are born. Produced directly at the mountain pasture itself and then transported down to the valley after about 20 days, they exhibit unique and peculiar characteristics also due to an unparalleled vegetation: each cheese thus carries the flavors of a specific place, of certain pastures and mountains.

The cheeses from the Italian mountain pastures located in the Venetian or Lombard Alps possess typical vegetal scents, often fermented.
