Why choose a superior quality pasta?

Even in the preparation of a simple first course, the quality of the product used makes a huge difference. But what are the elements that differentiate a mediocre product from a superior quality pasta? First of all, the wheat: both Gragnano in Corsa and the Felicetti pasta factory are ancient companies, now centuries old, rooted in the territory, that prefer local wheat grown in unpolluted areas. And while the city of Gragnano in the province of Naples can boast the prestigious European recognition PGI, the Felicetti company uses wheat grown in a special area: Predazzo. Its valleys are the origin of this excellent pasta, available in many varieties that cater to every taste. 
 

Naturally dried pasta

Natural drying in the air is another element to consider when choosing a quality pasta: it helps preserve all the properties of the wheat intact. Completing the picture is a craftsmanship process and bronze drawing, which makes the pasta rough, able to hold the sauce better.
