The Arance di Ribera DOP have the advantage of being particularly balanced in the relationship between acidity and sweetness and, for this reason, are very versatile in the kitchen. Their pleasantness is enhanced in both sweet and savory preparations. Their juice is rich in aromas and extremely aromatic, with an interesting percentage of sugars.
It is an excellent juice for making cocktails, for example. The orange peels greatly enhance those Gins that have a slightly spicy and herbal tendency.
With these oranges, delicious dishes can be made such as duck à l'orange, where the meat requires an aromatic value that the peels and juice of Arance di Ribera DOP can provide. An optimal solution to overturn the wild flavor that characterizes the animal. The sauce obtained is highly aromatic and pairs perfectly with the crust formed by the meat after cooking.
Another dish where these delicious oranges can be an added value is in gratinated mussels. A very tasty recipe that intrigues with its pleasant citrus freshness. You take the mussels, open them, and cover them with a breadcrumb mixture made from orange zest, orange juice, breadcrumbs, parsley, salt, and pepper. After covering them, they are placed in the oven at 170°C for 10 minutes.
Another use that will greatly elevate the quality of your creation is in sangria. The famous Spanish drink becomes a delicacy to try with these oranges.
Also, try using these oranges in sweet and sour dishes, but especially in a recipe that isn't sweet: for example, with roast suckling pig, prepared with orange juice and small pieces of the fruit's skin. A delicious sauce will form that can be used to garnish the meat when you serve it.
Many times we prepare boiled fish that, when frozen, has lost some of its flavor and becomes neutral. Try to flavor it by cooking it in a pan with fine orange zest and perhaps working the meat with some juice. In the end, you will find yourself appreciating the fish as you couldn't with its limited aromatic strength in boiled form.
The Arance di Ribera DOP are excellent for making fresh-squeezed juices, for being mixed in smoothies, for a natural morning snack, or for a refreshing finish to your meal.
The total indulgence could be found in preparing candied orange peels: passed in water and sugar and then placed in the oven to caramelize. While still warm, simply dip them in a gianduia cream, in a cup of thick chocolate, or in melted dark chocolate cream.
Of these oranges, apart from the white fiber, nothing goes to waste!
