Since we included it, there has been a constant increase in requests: we are talking about the legendary Gran Kinara, the cheese by Fattorie Fiandino made with vegetable rennet and lactose-free! This is the first hard cheese for grating made with vegetable rennet and long-aged ever! An absolute novelty! To make it, Piedmontese milk and flowers from Cynara Cardunculus, a wild cardoon that grows spontaneously throughout the Mediterranean basin, are used. The long aging, over 12 months, has allowed the product to be lactose-free, obtaining Halal certification, which is essential for the Muslim world and for exporting to Arab and Asian markets.
