An acetaia, but not just that: a style of vinegar, a passion that has led the Oddolini family, particularly Marianna, to start a start-up that does not produce the usual Aceto di Modena IGP, but instead Essenza di Modena. It is very important to emphasize this detail, which characterizes the company in its premise. In fact, Acetaia Oddolini has decided to stay out of the Consorzio IGP di Modena precisely to stand out and give its essence recipes a personalized touch, creating absolutely innovative and creative ideas, useful for preparing appetizers, dishes, and desserts with a unique and exquisite flavor.

Certainly, the respect for tradition is guaranteed by the creation of a characteristic vinegar in all its production phases, but with the passion and creativity of a young company, which has been able to add an extra touch thanks to desire and imagination, in order to offer a customized and innovative product of its kind. Acetaia Oddolini offers products of the highest quality, capable of enhancing the land of origin, the vineyards that produce the grapes, the raw material, dedicating themselves personally to all phases of production of the Essenza di Modena.
 

HOW ESSENZA DI MODENA IS PRODUCED

Essenza di Modena is produced in full respect of the tradition related to the production of balsamic vinegar. Acetaia Oddolini takes care of all the phases of production personally, to guarantee a product of highest quality, unique in its kind. Starting from the vineyards that provide grapes of its own production, Acetaia Oddolini takes care of the cooking of the grape must until the obtaining of the Essenza di Modena, which is then bottled in-house; all in a completely artisan way.

The Essenza di Modena is a healthy, natural, and artisan product. It does not contain colorants, caramel, or preservatives that could alter its naturalness. Moreover, it is gluten-free and GMO-free, an important characteristic for those who suffer from celiac disease and for those who want to ensure that every ingredient used in recipes is completely natural and not genetically modified.

Last but certainly not least, the organic conversion: the company places great importance on the naturalness of the product and for this reason, the essence is in organic conversion, while its vineyards are already certified organic. This is why it is able to guarantee the healthiness of all the ingredients used and of the production processes, far from being artificial or treated with chemicals of any kind and origin.
