The rice that grows in the agricultural land is nourished solely by Water and Sun: hence the name, a guarantee of the product's naturalness and quality.

The rice of Acqua e Sole is produced and controlled entirely by the company: from the selection of certified seeds, to cultivation, processing, and distribution. All this guarantees the customer complete traceability of the rice served at their table: a high-quality rice, controlled at every step of the supply chain. The strength of Acqua e Sole lies in complete control of every production activity: grown with love, entirely overseen by the company from beginning to end of the production journey. Acqua e Sole: the supply chain

The rice of Acqua e Sole comes from certified and selected seeds by the company's experts. It is sown in the 350 hectares of land surrounding the agricultural company, An Fed Agri, where it grows kissed by the sun, immersed in lush and generous nature.

Here, the rice seedlings grow day by day, using cultivation methods that respect nature and pay great attention to biodiversity. Once the plant reaches maturity, the harvest begins, aided by advanced technology, which allows the fruit to be gathered in full respect of the rice field environment and tradition.

Once the harvest is complete, the rice is processed on-site, using cutting-edge machinery, and is dried in modern and eco-sustainable facilities, utilizing solar energy through photovoltaic panels.

The rice is packaged within the company, in packaging that expresses the essence of Acqua e Sole: the highest quality of the product, yet born and grown simply, with two only ingredients: water and sun.

Acqua e Sole offers a type of rice for every need: for a fresh summer rice salad, for a warm and tasty creamy risotto, or perhaps for a quick dish prepared with light, fiber-rich rice: indeed, Acqua e Sole has many types of rice and rice flour, all 100% Italian, from seed to grain, and all fantastic for creating delicious recipes, quick or refined, simple or more elaborate, one for every occasion! Here are some of the Acqua e Sole products!

Arborio Rice, an extraordinary rice with large, pearled grains that absorb a lot of water during cooking; its characteristic is to cook perfectly, always maintaining an al dente texture. This type of rice is ideal for creamy risottos, like the classic mushroom risotto, dry rice dishes, and timbales. Not only that, it will amaze you if prepared in a creamy soup!

Carnaroli Classic Rice, an extraordinary rice, known as the "king of rice". Thanks to its starch content, solid consistency, and longer grains, it holds cooking exceptionally well, ensuring the success of the dish! Carnaroli rice is well suited for preparing excellent risottos and meat-based dishes, as well as cold rice salads with vegetables, due to its crunchiness and ability to maintain integrity during cooking.

Carnaroli Integral Classic Rice, high in starch, with a solid consistency and robust grains, holds cooking perfectly. Compared to the classic version, the whole grain retains more nutritional properties, and a greater amount of fiber in particular. It is highly digestible and has a lower glycemic index.

Il Moro Whole Grain Black Rice: a rice with a strong, intense, extraordinary flavor! Try it without seasoning, to savor its distinctive taste! This rice is highly appreciated for its low glycemic index and for the presence of a natural pigment that has antioxidant properties. It is a whole grain cereal, thus contains starch and fiber, and very little fat. It is high in B vitamins and minerals such as iron and selenium, in amounts even four times higher than those found in regular rice. Il Moro Whole Grain Black Rice is particularly suitable for pairing with fish, shellfish, but also white meats and vegetables; with strong-flavored cheeses, and finally for enriching salads and soups.

Roma Rice, an extraordinary rice, with long and plump grains, with a texture ideal for perfectly absorbing any seasoning, while remaining compact and well-separated. Il Cardinale Whole Grain Red Rice

Il Moro Whole Grain Black Rice Flour
, produced by grinding whole black rice grains. It is gluten-free and very versatile in the kitchen, has a low glycemic index, and thanks to the presence of a natural pigment, has antioxidant properties. It contains starches and fibers, but few fatty acids. Il Moro Whole Grain Black Rice Flour is suitable for preparing sweets and coatings, but it is also ideal for thickening sauces.

Carnaroli Classic Rice Flour, produced by grinding Carnaroli rice grains, is naturally gluten-free, gentle, and perfect for those preparations that require low moisture in the dough. It can be used for coatings for frying, but also as a thickener for sauces or soups. It can also be combined with other flours to prepare truly surprising desserts!

Il Cardinale Whole Grain Red Rice Flour
, produced from the eponymous rice, is gluten-free, nutritious and rich in fiber, antioxidants, vitamin B6 and minerals. Being also a good source of protein, it is suitable for vegetarian and vegan diets. Delicious sweets, coatings, and much more can be prepared.


Acqua e Sole's cooking tips

Acqua e Sole has extensive experience in the rice sector: from seed to grain, to the table! With Acqua e Sole's kitchen tips, you can serve always tasty and well-prepared dishes. We particularly recommend two recipes: white chocolate risotto and red rice omelet with mozzarella and tomato. Bon appétit!

To prepare white chocolate risotto, you will need classic Roma rice, shallots, white wine, extra virgin olive oil, broth, a pinch of wasabi paste, basil, and obviously white chocolate.

Sauté the chopped shallots in oil, add the rice and toast for a few minutes. Add the white wine and let it evaporate. Now, add the broth (preferably homemade, not made with stock cubes), one ladle at a time, and stir well. Blend the basil with the oil and set the mixture aside. Five minutes before cooking is finished, add the white chocolate to the rice, turn off the heat, and add the basil oil and wasabi. Let the risotto rest with the lid on for a couple of minutes. Serve hot, and enjoy this flavor journey!

: intriguing, unique, and special. A risotto with oriental notes combined with the sweet flavor of chocolate and basil takes us on a true journey through different culinary cultures, absolutely worth trying!

For the red rice omelet with mozzarella and tomato, you will need red rice, eggs, tomatoes, mozzarella, basil, butter, oil, salt, and pepper.

Start by cooking the rice in boiling water: it will take about 25 minutes. Then drain it and season with butter. Slice the mozzarella and tomatoes. Break the eggs and beat them with salt and pepper. Add the rice and carefully mix everything together. Place the mixture in a pan with a little oil. Be careful when moving the omelet, because until you see the crust forming at the bottom, it might break when you move it. Once it's cooked on one side, flip it with the help of a plate. Spread the mozzarella and tomato slices on top. Cover with a lid to help the mozzarella melt with the heat. In just a few minutes, the omelet will be ready to serve and enjoy!

This is an alternative recipe to the usual pasta omelet, original and tasty. A simple recipe that can be enjoyed by the whole family, and can be varied based on your imagination or the ingredients you have in the fridge: you can, for example, add grated cheese, sausage, shrimp, or spinach. It is a very versatile dish, and this version of omelet with mozzarella and tomato is particularly delightful, with a light and fresh flavor touch.
