For over thirty years, Opere di Latte has been operating in the dairy sector, providing excellent products, thanks to the work of Umberto Zizza, the master cheesemaker of Parmigiano Reggiano who has brought fame and notoriety to the company over the years: a local reality known throughout Emilia Romagna, where the prized cheese is produced using rigorous artisanal methods, becoming a symbol of Italian excellence.

During these thirty years of activity, the children of master Zizza have continued the family mission, driven by the desire to pass on this wonderful tradition but also to renew it to always keep up with the demands of the public, always guided by the traditional processing of milk, until it becomes the traditional Parmigiano Reggiano. Opere di Latte is a family-run business born from over thirty years of experience in the dairy sector of Umberto Zizza, the Master cheesemaker, who over time has involved his family and children in the activity, passing on to them the love and passion for tradition and artisanal dairy products, creating true works of milk.

All this is possible because Umberto Zizza has award-winning experiences as a cheesemaker and consultant, acquired over time at prestigious dairy farms in the hills of Parma. Here, Umberto Zizza has demonstrated all his multifaceted talent, from solving problems related to the production of Parmigiano Reggiano cheese to organizational issues, or working as a team with several people. Thus, the work of the entire family at Opere di Latte is a natural consequence of this passion, which has grown over time, expanding and extending the family’s tradition and knowledge to the production of fresh cheeses and excellent Yogurt, true works of milk.


Opere di Latte, a supply chain of taste and tradition

Opere di Latte produces all its products exclusively with milk from its own production, which is selected and processed daily by expert cheesemakers, producing cheeses and other dairy products. Each product from Opere di Latte is genuine, tasty, rich in the flavors of the skilled processing typical of the area, and above all of the high quality of the raw materials used. Only this way can Opere di Latte achieve an unparalleled finished product, which stands out from any others available on the market. From milk to finished product, every step is carefully managed by Opere di Latte, which can guarantee the customer a great cheese, truly of superior quality. Opere di Latte: the products

The milk with which Opere di Latte produces its dairy products comes exclusively from rigorously selected farms: all productions are made with milk that is selected and processed to become Parmigiano Reggiano, Caciotte, Yogurt, Panna Cotta, Ricotta, Spreads, and many other cheeses like the Oro Zecchino, an exclusive product guaranteed by the quality that Opere di Latte always assures for each of its products.

The dairy products are of the highest quality thanks to the artisanal production method passed down for centuries, which allows for the best possible product. For this reason, it is possible to produce only a limited number of forms each day, which are marked according to regulation with the registration number, showing the quality commitment made to customers.

The artisanal nature of the product is also evident in the coloration of the forms and the flavor, factors that can vary slightly based on the month of production, the period, aging, and packaging. Opere di Latte always pays meticulous attention to every part of the process, protecting Parmigiano Reggiano with traditional vacuum packaging, and not with hot vacuum sealing, to avoid thermal shock and preserve the quality and characteristics of the product.

Among the varieties of Parmigiano Reggiano produced by Opere di Latte, the following maturations can be found: 14-18 months, 24 months, 30 months, 36 months, 48 months. Naturally, the texture will differ in crumbly and granulated qualities, which increase with aging. The 30 months, for example, offers the unmistakable flavor of Parmigiano Reggiano rich in spicy notes, with a full taste that satisfies all palates, even the most refined. The Parmigiano Reggiano is made from raw cow's milk and partially skimmed milk from rising, without adding colorants, additives, or preservatives. Its production is outlined by the Disciplinary of the Protected Designation of Origin and is protected by the Parmigiano Reggiano Consortium. The Parmigiano Reggiano from Opere di Latte is exquisite for accompanying every meal, grated or in chunks, and is perfect as a star on delicious cheese platters or as an appetizer. It is ideally suited to enrich risottos or to garnish pasta dishes, and seafood and meat carpaccios.

Attention is not only reserved for Parmigiano Reggiano, but also for Yogurt: Opere di Latte's yogurt is truly fantastic! Available in many versions, natural or with various fruit flavors, the yogurt is produced using the best fresh milk from the farms selected by Opere di Latte: a necessary step if one wishes to provide truly traditional yogurt, exactly as it was eaten in the past, before the arrival of industrial production of the product. Opere di Latte produces it artisanally, following ancient production methods. All this to ensure a product that is truly special, genuine, and authentic, of superior quality, suitable for any time of the day, to be enjoyed alone or with fruit or cereals.

A special mention should be made for the cheese Oro Zecchino by Opere di Latte, an extraordinary aged product made with pasteurized cow's milk. The result is a fresh flavor, but at the same time structured and persistent, which gains more pronounced notes of wild herbs with aging. The shape is that of Parmigiano Reggiano, but smaller, about 5 kilos, with a thinner crust proportional to its shape. The texture is creamy, and with aging it becomes increasingly crumbly. Oro Zecchino is a table cheese perfect for every meal, to be paired with important dishes or with a wine tasting.
