Just six kilometers from the municipality of San Pietro in Cariano, in Valpolicella, is the small locality "Moro Freoni", where many years ago Angelo Freoni, known as "Il Moro", turned his passion for local traditional products into something more that would accompany him throughout his life. Thus were born his small trattoria and a butcher shop, both family-run, which aimed to create dishes and meats of absolute excellence for the small town.
Dosolina was not just Angelo's wife; she was a real cornerstone of the traditional trattoria and butcher shop, born from her husband’s unbounded love for meat processing. Her experience, techniques, and love for cured meats became the cardinal points of the family.
Often there are no "secrets in the craft"; sometimes, it only takes a lot of passion, dedication, and humility to achieve one's dreams, and that’s how it was for Angelo Freoni, the family’s mentor. It was in this spirit that Angelo decided to take the extra step and transform his butcher shop into a true laboratory of typical delicacies: in 1926, the Salumificio Freoni Danzi was born. Thanks to the strategic location of this area, which bordered the State Road of Brenner, business began to develop significantly. Il Moro proved to be a forerunner of his time as well as a jovial man full of interests: he opened a tavern whose license belonged to the mother of his wife, Dosolina, who was the backbone of the business. A sort of “autogrill” emerged, providing customers with various services. He was one of the first merchants to understand the power of advertising by placing promotional signs along the provincial road for kilometers with offers and discounts.
The work and passion of founder Angelo Freoni are carried on today by his descendants: the management of the salumificio has reached the fourth generation.
