The Garda Egg Co: when nature inspires you

The Garda Egg Co is a project born from the genius of a woman, Federica Bin, during a phase of her life characterized by a significant change. A new, spacious, bright home with ample land and fresh woods, and in the distance, the azure line of the Lake Garda.

A tranquil haven after years of intense rhythms. In this reassuring context, the desire to keep animals emerged spontaneously, answering the call of nature and the simplicity of small things. After all, how can one resist being surrounded by such a rural landscape?

One day, a turning point: Federica hears about the colorful eggs, exceptional for their beauty and taste, produced by hens of special breeds. And so, almost as a game, Federica Bin bought a dozen of hens of different breeds, captivated by the thought of those superior eggs increasingly sought after by top chefs, pastry chefs, and gelato makers for their exceptional qualities.

Research then begins: how to obtain colorful and tasty eggs, beautiful and good to eat? She discovers that these eggs are gourmet products from virtuous farms and obtained from free-range hens raised in large spaces, exclusively fed with certified organic grains, an ethical choice immediately embraced with deep conviction by Federica.

This is how the adventure begins: with the ideal place and a sincere and growing passion, Federica Bin founded the farm "The Garda Egg Co." and embarked on the breeding of her hens on a path of respect and love for nature and animals, which distinguishes virtuous farms driven by noble ideals.

The results did not take long to arrive: every day, the company, in continuous evolution, expands its production. After all, it’s hard to resist the charm of these eggs: colorful, in shades of brown, green, and blue, offer a rich array of aromas and flavors.

From the initial 10, today “The Garda Egg Co.” has reached 100 hens and soon, with new investments in shelter facilities and land, there will be more than 500. An exciting project that fulfills the company's mission: to give value to what is the true quality of nature.
 

The Garda Egg: the varieties of eggs offered

It’s time to meet the protagonists of this story: the hens! Federica Bin, after thorough research, identified some specific breeds for the production of her eggs. Some come from very, very far away.

The breeds of laying hens raised on the farm's estate are Australorp, Araucana, Olive Egger, Marans, New Hampshire, White Livorno, and Red Livorno.

The Australorp hen comes from the scorching Australia. The eggs are a beautiful light brown color, almost a neutral and uniform beige. The Araucana is native to the Chilean Andes. The eggs have a light aqua green color, almost tending towards sky blue.

They are characterized by a very particular aroma and flavor of chervil, sweet and savory, warm, and compact. They are ideal for omelets or enjoyed hard-boiled, so you can fully savor all the aromas.

Another breed is the Olive Egger, a Peruvian hybrid variety born from the cross between a Marans and an Araucana. As suggested by the name, it lays olive green eggs, in various gradient tones, absolutely exquisite to the eye and palate.

The aroma is very delicate and elegant, vegetal, reminiscent of myrtle scents. Due to the extreme delicacy of this egg, the ideal consumption would be in omelets or salads, emphasizing the herbal notes.

Next, we have the Marans, originally from the Atlantic coasts of France, whose eggs are characterized by a "reddish-brown" color and aromatic, intoxicating, complete wood notes. They are so flavorful that they are best consumed not only hard-boiled or sunny-side up but even raw.

Moving on to the New Hampshire, which come directly from the United States. These eggs have a beautiful reddish color, reminiscent of the marbled and arid lands of the southern USA.

The aroma of these eggs is very unique: they recall fresh butter, are oily, and intense. For this reason, they are ideal for soft-boiled, poached cooking, and for making the queen of sauces: mayonnaise!

Let's return to Italy with a breed all our own, the Livorno, both white laying white eggs and red laying red eggs. There’s no need to say many words about these eggs: elegant, sweet, savory, and complete, they are perfect for enhancing flavors, thus for preparing fresh pasta, pastry cream, and mayonnaise.
