Here are a few ideas.
First, we suggest an cold pasta salad with chicken, ideal for those on a diet or for anyone needing to empty the fridge. You will need few ingredients, first and foremost pasta, which must be short and there’s no joking about that. Feel free to use farfalle, the queens of summer cold pasta, but also fusilli or penne or whatever you like best, as you prefer.
No spaghetti, linguine, or bucatini because they stick together, and from “cold pasta salad” to “indecipherable pasta tangle,” we can assure you that it happens in an instant.
So, as we said: for four people you will need 250g of short pasta, 100g of peas, 200g of grilled or roasted chicken breast (clearly deboned and cut into pieces), a generous handful of cherry tomatoes, a handful of black olives, two tablespoons of Parmesan flakes, black pepper, freshly chopped parsley, salt, and oil. After cooking the pasta, drizzle it with a little oil to prevent sticking, then mix well and let it cool. Boil the peas, let them cool, then chop the vegetables and chop the parsley. When everything is cold, mix the ingredients with the pasta: add a little more oil, a pinch of salt, and a nice sprinkle of pepper. You’ll see, it will be delicious!
If you’re looking for light and tasty cold pasta recipes and if you generally prefer fish, then try the cold pasta salad with swordfish. For four people, you'll need 350g of short pasta, 2 slices of swordfish, 200g of cherry tomatoes, 2 tablespoons of Taggiasca olives, 1 clove of garlic, olive oil, basil, salt, and pepper. First, remove the outer skin of the swordfish and then cut it into cubes. Sauté a clove of garlic in oil, then throw the swordfish cubes into the pan, and meanwhile, cook the pasta, which you will then need to drain and cool under running water. Remove the swordfish from the heat. When the pasta is cold, add all the ingredients and, lastly, crumble in some basil leaves. Delicious!
We know that cold pasta recipes with tuna are a must. Tuna is one of the most beloved and always available ingredients in the pantry. After all, how can you not love it? Tender and flavorful, everyone likes it, even children, so at least a few proposals with tuna are a must.
The first option is pasta with tuna and corn: you will need 250g of short pasta, 200g of high-quality canned tuna (have you already seen our offerings?), 100g of canned corn, 100g of cherry tomatoes, EVO oil, salt, and pepper. Cook the pasta, chop the cherry tomatoes, chop the fresh basil, combine the ingredients... and that's it, your pasta is ready.
If you’re not a fan of corn, try the alternative with olives. For four people you'll need 250g of pasta of your choice, about 250g of canned tuna, 300g of cherry tomatoes, 60g of black olives, fresh basil to taste, 200g of mozzarella, salt, and pepper. Again, no cooking is necessary. Combine the ingredients and let them marinate, it will be a delight and everyone will truly love it.
Are you looking for fast cold pasta recipes, where you don’t have to cook anything but the pasta? Don't worry, there are many options that will allow you to have a delicious pasta ready in ten minutes.
The pasta should always be prepared the same way: cook, drain, drizzle with oil or rinse with cold running water to prevent sticking.
The first proposed condiment is the classic Mediterranean: 100g of sun-dried tomatoes in oil, a tablespoon of oil, two handfuls of pitted black Taggiasca olives, a generous handful of fresh basil, and, if desired, mozzarella balls or feta (if you want a light or vegetarian version, you can omit the cheese and perhaps add some flaked almonds, it will still be delicious). Perfect for a quick and traditional dish.
If protein is a must for you, the following cold pasta recipes are ideal. Try a simple pasta with quality smoked salmon. For four people you will need 200g of smoked salmon cut into pieces, one ripe avocado diced, oil to taste, a handful of fresh mint, salt, and pepper. Refreshing and delicious.
You can also try the version with shrimp: 300g of pickled shrimp, 250g of halved cherry tomatoes, oil, parsley, pepper, and a tablespoon of lemon juice. An alternative recipe that’s really chic, also perfect for an aperitif.
Do you prefer mountain flavors? Then take 200g of bresaola in strips, 2 handfuls of arugula, a handful of chopped mushrooms, 50g of Grana Padano in flakes, and a tablespoon of oil. There you go!

The first proposal is cold pasta with pesto, potatoes, and green beans: you will need 200g of pasta, 2 medium potatoes, two handfuls of green beans, and a package of vegan pesto. Cook the pasta and in another pot, cook the diced potatoes and cleaned vegetables in plenty of salted water. Then, drain and let cool. Combine the ingredients and season with vegan pesto, finishing with a nice sprinkle of ground flax seeds if desired. Super tasty and really easy to make.
But there are many vegan cold pasta recipes. One alternative could be a pasta with chickpeas and vegetables. For four people you will need 200g of cooked chickpeas, two tablespoons of sun-dried tomatoes in oil, one finely chopped Tropea onion, one julienned carrot, and a handful of basil, salt, and pepper. Besides the pasta (and possibly the chickpeas), you won’t need to cook anything. Chop the tomatoes, chop the basil, julienne the carrots, then combine the ingredients and serve. Done!
