The story of Tenuta Scorciabove: true love for tradition

The story of Tenuta Scorciabove began in the Seventies, when tractors plowed at night and there was no radio to keep company, but only memories and dreams. It was his grandfather, at that time, who transmitted to his children and then to his grandchildren his passion for agricultural work and the tricks of the trade, all the love he had for the land and his dedication to work. In those years we could not yet speak of a company, but of a kind of traveling workshop, a Bedford, with which the family supported themselves. However, the day came when the opportunity presented itself to take over &' Don Lello Petrilli's company and a land of 160 hectares, and here was the turning point. In 2012, the Apulia Verde Agricultural Society was founded with the specific intention of basing its roots in the agricultural tradition of the Rossi family. Today, with a land of more than 500 hectares, it is Raffaele, Chiara and Francesca, or l&' the latest generation, to run the family business and to combine the cultivation of tomatoes with its transformation into organic artisanal products, just the

way we like them.

Immediately, as soon as it was founded, the company decided to move towards the world of organic food and immediately obtained certification from the ICEA institute, one of the most qualified consortia in the BIO sector in Italy and Europe. Focus: tomato sauce


One of the objectives of Tenuta Scorciabove is to preserve Apulian products and the goodness of the fruits of this wonderful land, bringing to the table a simple and genuine product, but emblematic of our cuisine, namely tomato puree. Once upon a time, the production of pasta was a regular fixture in every home, a tradition that united all regions of Italy, but today, for multiple causes, this tradition has almost been lost. And yet, tomatoes are one of those products that can never be missing in our pantries. Not surprisingly, in local cuisine, tomato sauce is the basis of many dishes such as ragù, sauces, pizza, soups and so on.

And yet, can you believe that this has not always been the case? The tomato is a fruit native to Latin America and arrived in Europe only after the discovery of the New World. Initially it was used mostly as an ornamental plant, being considered inedible, and only around the 16th century did it begin to be used in the kitchens of Southern Italy. It then seems that the practice of canning was born in Parma, where for the first time tomatoes, after being dried in the sun, are used to make sauce. What is certain is that from that moment on, tomatoes have become an indispensable product in our kitchen, being still highly sought after today, so much so that the market is saturated with this product and the choice is increasingly difficult, also due to the lack of clarity of the labels.
Choosing a good sauce has become a difficult task because it is not always possible to trace the production area, the origin of the raw material, the techniques used or the processing methods.

The products of Tenuta Scorciabove are of the highest quality, and it is no coincidence that they can claim the ICEA certificate. The raw material used is followed from the beginning, by fields, organic land near the promontory of the Gargano National Park and chosen specifically because they are ideal for the cultivation of different varieties of tomatoes. The climate, the structure of the territory and organic agriculture are the secret ingredient of the Apulia Verde Agricultural Society.
The tomato, after being picked manually, is washed and carefully selected, and then transformed within 12 hours of harvest, thus preserving the organoleptic characteristics of the fruit just picked. But let's get to the products.

The first one we present to you is the BIO round tomato sauce, a sauce that brings to the table the taste and scent of the traditional Apulian tondo. It is a thick and velvety sauce, characterized by a beautiful bright red and a fresh and genuine tomato flavor, as if it had just been picked from &' vegetable garden. Ideal for pasta dishes, this sauce does not need much work to be enhanced, as it is already very tasty. It will be enough to heat it in a pan, perhaps first flavoring a little' with extra virgin olive oil with a clove of garlic, and then stir in a good thick paste. Add a few fresh basil leaves and here is a healthy, simple and genuine pasta dish.

Another product is the organic date and round tomato puree, in which the softness of the round tomato is broken by the sweetness of the datterino. Again, it is an ideal sauce for pasta, but also for other dishes. Try it, for example, on pizza, but also to make good lasagna or to flavor meat and fish dishes.

Organic peeled tomato puree is perfect both for quick preparations and for long cooking, such as more substantial soups or sauces.

Finally, there is the BIO date tomato puree, sweeter than the others and really delicious. Even in this case, there is no need to do much work to enhance the flavor and sweetness of this sauce. Oil, garlic clove, basil, a pinch of pepper and a pinch of salt... and off you go, your sauce is ready! As good and genuine as the homemade one.
