This could be the motto of Ricetta91, a project born precisely from a story of friendship, passion and genuine values and of which the land, that of the Euganean Hills in that of Monselice, in the province of Padua, is the inspiring Muse. The protagonists of our story are Matteo and Luca, two young friends from an early age and united by the same indelible passion for nature and good food, understood as tasty and healthy. Recipe 91: the underlying values

The story of Ricetta91 starts from a long friendship, the one between Matteo and Luca. Always friends, despite their different stories and paths, Matteo and Luca share the same passion for nature and good food. This is how the idea of creating something personal was born to give substance to one's passions. Here is a dream outlined, which today it is possible to call Ricetta91.

The main purpose is to offer healthy and genuine food, using mainly the highest quality raw materials, all cultivated and transformed directly on the farm. Matteo and Luca, however, have a project that goes far beyond production.
The two boys, well aware of the importance of safeguarding the territory, decided to combine the quality and culture of tradition with respect and protection of &' environment, paying particular attention to operating
in a sustainable way both from a water and energy point of view. Is there perhaps a better way to pay homage to and thank the Euganean Hills? In fact, it is precisely the land of this territory that allows 100% natural production, in the total absence of any chemical additive.
Added value to production is then given by Matteo and Luca, who, once the raw materials have been collected, work to transform them within the next 24 hours, preserving their freshness and taste and ensuring a very high quality of the final product. And this is precisely why Ricetta91 products represent what c&' it is good to bring to the table every day, both for breakfast and during meals: vegetable jams, fruit jams, preserves and syrups.

Matteo and Luca use the typical recipes of the Venetian culinary tradition, rediscovering those flavors and aromas lost or that characterized their childhood, but trying to reinterpret them in a modern way so that they stand out for their freshness.

We know Luca and Matteo

All we have to do is get to know the two authors of this ambitious project, worthy of praise even for the young age of its creators: both Luca and Marco are in fact born in 1991. But where does their passion for the art of good food come from?
Luca, in reality, comes from a very different environment from the agricultural and culinary one. Graduated in Law from the University of Padua, he decided to pursue a passion that emerged at an early age. In fact, already as a child he worked on the family farm as a helper, immediately coming into harmony with agriculture and nature.
Matteo's story is not much different: he graduated in Management Engineering from the University of Padua and then continued at the Polytechnic of Turin, from an early age he helped his grandfather cultivate the vegetable garden and family fields.
In short, in both cases it is a passion born already in childhood.

A few years after finishing their studies, they decided to join forces and create Ricetta91, whose name encompasses the business philosophy: the word recipe in fact indicates the fact that the products are the result of ancient traditional recipes revisited in a modern key, while 91 is precisely the year of birth that unites them.

Today, the goal is to amaze the market with the quality that only those who control the entire supply chain can guarantee. Matteo and Luca strongly believe in organic farming and are now waiting for certification. The raw materials do not undergo any type of chemical treatment, thus creating natural products without additives and dyes, with few sugars and truly genuine and, above all, totally sustainable, since neither pesticides nor chemical fertilization are used. Ricetta91's products, vegetable mixes to be enjoyed!

The first product we present to you is green tomato jam, a healthy and genuine product, but above all very tasty. The tomatoes, picked half ripe, are processed within 24 hours, leaving them to macerate with sugar and home-made white wine for at least 12 hours. Finally, slow cooking is expected until the desired density is reached. The green tomato jam is really strong and is perfect on toast, combined with an excellent glass of sparkling wine and good aged pecorino cheese or similar cheeses, but also next to grilled or roasted meat. This jam is ideal for a true and sophisticated aperitif thanks to the perfect balance between the acidity of the green tomato and sweetness.

A must-have is pomegranate syrup, a truly versatile flavor concentrate. Produced with Wonderful quality pomegranates, hand grained and cold pressed to preserve their color and qualities, it is a sort of pomegranate molasses obtained with the juice of the beans then boiled and thickened with sugar.
Pomegranate syrup is an authentic product with ancient origins. In the past, in fact, it was an ancient remedy for coughing, which is why having a jar of it in winter is a must. In addition, pomegranate syrup is a basic ingredient in many Middle Eastern recipes. Also perfect as an accompaniment to super aged cheeses (Stravecchio, Grana Padano etc.) and aged Pecorino cheese. In short, really a very versatile product!

Pepper jam is a product intended for all lovers of this very tasty summer vegetable. For its production, yellow, red and green peppers are used, collected and processed within 24 hours and then cut and left to macerate and for at least 2 hours and 30. Pepper jam is also a perfect product for breakfast or as an ingredient for cakes, ice cream and omelets, as well as being highly recommended with semi-aged cheeses and roasted meat.

Let's move on to the red turnip jam. Red turnip is a vegetable that is often difficult to value but that, if you don't like it, you can reevaluate thanks to this genuine and tasty jam. The secret of this jam is that few but high-quality ingredients are used. The turnips are left to soak for 12 hours and cooked for at least 3 hours.
The result is a jam rich in color and soft in taste, perfect for the most refined palates. To savor all its nuances, it is recommended to combine it with fresh and soft cheeses, but due to its delicacy it also goes well with white meat.

The last product intended for lovers of strong flavors is the extra red onion jam, left to macerate for more than 12 hours and then cooked for at least two and a half hours with a little sugar. The result is a perfect sweet and sour sauce with super-aged cheeses (Stravecchio, Grana Padano, etc.) and Pecorino, but also with medium-aged cheeses such as Monte Veronese Stravecchio di Malga or Bagoss di Bagolino. Also perfect as a combination with grills or trays of winter boiled meat, this jam will add color to your lunches and appetizers.
