Let's start from the beginning: who is the Compagnia del Cioccolato? Some might define them as the Sommeliers of chocolate but, in reality, they are much more than that.
The members of this association with a flavor of other times research and taste new chocolates around Italy and abroad with the primary and democratic purpose of seeking pleasure and objective quality.
What is the goal? To seek out Italian excellence in the field of chocolate, thus protecting its consumption, to inform and guide its members consciously.
Compagnia del Cioccolato is an association made up of experienced consumers and chocolate enthusiasts founded in 1995 in Perugia by Eugenio Guarducci, the first president, Roberto Bava, and 22 other founding members.
It took very little time to transform this non-profit association into a point of reference for the defense of quality Italian chocolate-cocoa. But now let's take a closer look at what Compagnia del Cioccolato actually does.
Compagnia del Cioccolato, alongside its research and quality protections, organizes courses for Chocolate Tasters, tasting evenings, and wine and spirits pairings, study conferences and updates, and thematic events.
Since its inception, it can also boast the publication of a guide with a detailed analysis of chocolates sold in Italy and the preparation of notebooks on cocoa and chocolate, an indispensable dissemination tool to spread the culture about the various aspects of this world.
Compagnia del Cioccolato has also created and promoted the European Chocolate Forum, an event during which chocolatiers, experts, and journalists bring their different and constructive considerations, diverse perspectives that animate the debate in the chocolate world.
Through its many activities, Compagnia del Cioccolato aims to communicate all the news to passionate consumers, encouraging them to choose and taste with awareness.
The belief of Compagnia del Cioccolato, a term not used randomly, to confer a sort of sanctity to the work of the association, and its president Gilberto Mora, refers to the concept of quality.
What does it mean and how is the quality of a chocolate identified? How is this concept applied in the productions of the most important European chocolate regions? A general analysis that has inevitably shifted the focus onto the Italian chocolate districts.
The goal has been, from the beginning, and will always be, to answer these two questions by identifying the boundaries that semantically define the concept of quality.
According to Compagnia del Cioccolato, when we talk about quality we should not refer to a purely taste aspect, which undoubtedly represents a significant but not all-encompassing lens; it is also necessary to consider various aspects: the choice of raw materials, the chocolaty and pastry art, the strict adherence to a consolidated tradition, the deep understanding of the world of chocolate, and the constant updates on its evolutions, the innovation of work in plantations from a more eco-sustainable perspective, the experimentation of new blends and flavorings, and finally, the inclusion of a “good cocoa” from various parts of the world into industrial-style productions.
These considerations have precisely led Compagnia del Cioccolato, alongside a long and complex evaluation process, to establish clear and transparent guidelines for tasting the various chocolates under examination.
This year marks the 19th edition of the Award, and for the 2021 awards, Compagnia del Cioccolato has thought of organizing something truly special.
The final ceremony will take place in person in the charming setting of the Ferrowine store in Castelfranco Veneto on April 25, 2021, at 4:00 PM. In the spirit of sharing that has always characterized the association, this year a Facebook live stream of the event will also be offered to broaden participation as much as possible.
The live stream will be available on the Facebook page of Compagnia del Cioccolato on April 25 at 4:00 PM. A distant tasting experience that this year, however, is tinged with magic thanks to the collaboration with Spaghetti&Mandolino.
