Summer dinner: 3 fresh gourmet dishes for midsummer night.

Maybe neither Shakespeare nor Alex Britti dedicated their lyrics to food, but we are Italians and we can do it!
Here we are in August, just a breath away from September and more than half of summer passed (unfortunately we're almost at the end)!
Don't despair, we still have time to enjoy the last warm days. It’s not yet soup weather, good for charity, but there’s... in the air... (get the quote?) summer, synonymous with dinner at sunset with delicious cold dishes.

We thought of three gourmet dishes that are very tasty and simple to prepare, which for us represent the ultimate summer dinner, of course with only fresh and artisanal products that are our specialty!
 

Summer Dinner: Gourmet Appetizer with Bruschetta of All Flavors +1, for a Perfect Start

You can't miss delicious bruschetta with fresh wholemeal bread. Just cut the bread into slices and toast it, also because the word bruschetta comes from "pane bruscato", meaning "toasted".

The bread can be toasted either in a pan without adding oil, or in the oven using the grill function at 200°C for about 7-8 minutes. After it has been well toasted, it's recommended to rub a clove of garlic on it and drizzle with a bit of extra virgin olive oil.

And why bruschetta of all flavors +1? Because after this step, you can proceed by placing a few spoonfuls of bruschetta topping on top.
We recommend three in particular that are very tasty and excellent: Bruschetta with Porcini Mushrooms, Sweet Tropea Bruschetta, and Bruschetta with Zucchini.
A trio you must try!
Alternatively, you can use Friselle, to be soaked in water and seasoned with tomato, oregano, salt, and extra virgin olive oil.
 

Summer First Course: Cold Pasta with Mozzarella and Pesto alla Genovese

Simple, genuine, and it tastes like Italy, tradition, and of course, summer. It's easy to prepare, requiring only fresh and quality ingredients.

Just cook the pasta and after draining it, rinse it under cold water to stop the cooking.
Meanwhile, you should prepare the ingredients separately: a sliced mozzarella, we recommend the Campania Buffalo Treccia, and some pesto alla genovese.
To finish, just combine the ingredients with the pasta and you’re done!
A delicious gourmet dish that is incredibly fresh and fragrant.
 

Fresh and Tasty Second Course: Zucchini Rolls with Prosciutto Crudo and Quartirolo

For the last dish, we decided to present something easy and tasty at the same time. Zucchini skewers are a flavorful dish typical of the summer season, as they are meant to be served cold. You can use any cured meat and cheese to stuff them, depending on your taste and what you have available.
The best pairing for us is with prosciutto crudo and quartirolo!

To make about 16 rolls, the ingredients you need are as follows:
- 2 medium-sized and relatively thick zucchinis;
- 80 g of sliced prosciutto crudo (we recommend Crudo Alpino)
- about 70g of quartirolo lombardo
- to taste extra virgin olive oil
- to taste salt

First, you need to prepare the zucchini: trim the ends and slice them into long, thin slices, then proceed to grill them on a grill pan, salting as you go.
Once cooked, it’s necessary to add a drizzle of olive oil.
Wait for them to cool and then spread with quartirolo. If desired, you can add some aromatic herbs for flavoring.

Next, place a slice of prosciutto crudo on top, trying to match the length, and roll each stuffed zucchini slice to form the cold zucchini rolls.

You can secure the rolls with toothpicks, or thread them onto wooden skewers to make skewers.
Here are the rolls ready, to be served immediately or refrigerated for up to 2 days.
If you want to enrich the filling, you can add a sun-dried tomato, a cube of tuna, or some olives.

Bruschetta, cold pasta, and zucchini rolls are the three dishes that represent the summer season, as they are fresh, tasty, and easy to prepare. You can enjoy them wherever and with whomever you want: here’s the summer dinner of Spaghetti & Mandolino!
