At the table with Piera: here are the truffle lover's favorite products

Truffle. Just reading the name, can't you smell its intense and intoxicating scent?
The autumn season is just around the corner and you are immediately flooded with that irrepressible desire for hot and steaming dishes, mushrooms, chestnuts and... truffles of course!
I consider myself the truffle lover par excellence: I literally love it in all sauces!
Whether it's an appetizer, a first course, a second course and, why not, even a dessert, if you add a hint of truffle to the plate, it immediately becomes the undisputed star. Terrific.
For this reason, with this article, I have chosen to present you with a menu entirely based on truffles, so you can take inspiration for some preparation and, who knows, invent some new dish with the ingredients that I will tell you.

At the table with Piera: here are the appetizers and first courses for a truffle lover

If you also like truffles to death (even if you like it and that's it, you don't have to be fanatical like me), I have in mind a super combination for an aperitif or appetizer, to be enjoyed alone or in company.

Unmissable in an appetizer for me are Dried Tomatoes in oil with Truffle, delicious on their own or enjoyed with some tarallo. As an accompaniment, fantastic Toasted Hazelnuts with truffles.

If you are more of a cutting board type, no problem: a nice wooden cutting board of cold cuts and cheeses, to which I would combine a Pink Apple and Truffle Compound from the Sibillini Mountains, which goes perfectly with seasoned mountain cheese, such as Monte Veronese!

Now let's move on to the first course, or rather, first courses, because I have various possibilities to introduce you to, very valid and tasty, all obviously based on truffles!
Linguine with black truffle are the first ones I suggest to you. Sensational if seasoned even with just a knob of butter or a drizzle of extra virgin olive oil.
A must try, as are the Tagliolini with Truffle, which unlike linguine, are dried egg pasta.

I also suggest a very good alternative to these types of pasta: gluten-free Casarecce with Truffle, a good product without animal ingredients, perfect for feeding celiacs and vegans, thus able to satisfy all dietary needs.

If, on the other hand, you prefer classic pasta, but would like truffles in the dressing, I can only recommend you try Pesto with Truffle, an exceptional product that brings the simplicity and scents of the earth to the table.
The sauce is already ready to use, it is ideal for seasoning pasta dishes, but you can also try it on bruschetta: amazing for your taste buds!

Another incredible first course that, in my opinion, can fully enhance the truffle is undoubtedly the Carnaroli rice with truffle. An excellent creamed truffle risotto with a creamy texture and an unmistakable scent is what you need on a cool autumn day.

At the table with Piera: truffle-based main courses for an unforgettable dinner

Let's start immediately with a tasty dish that is prepared in a very short time: a platter of cold cuts and cheeses only with a truffle theme!

For the sausage I thought of Truffle Salami and I will try to describe it to you: high quality, strong flavor, intense, sweet and pungent, enveloping aroma. An organoleptic riot!

Next to the salami I would put another product that I can't help but. I'm talking about Truffle Cheese aged 2-3 months, produced starting from a truffle caciotta aged for only 60 days. Think that during processing, the caciotta is enriched with truffles and, subsequently, it is expected to age for about 2-3 months.

Another truffle cheese that I like to recommend because it has a flavor that makes it unique thanks to the processing, is Perlagrigia under ash with truffle.
Here the black truffle is added in small pieces to the dough. What distinguishes it and what makes it so special is the process after curing for a month: the form is placed under beech ash and massaged with various kinds of spices. The result is a perfect balance between truffles, spices and milk. I consider it a real experience.

If it is already late autumn, if not winter, you can prepare it accompanied by meat, truffle puree. Intense and with a unique and exceptional taste.

But is there also a truffle dessert? But certainly, however, it has nothing to do with the “truffles” you find at the restaurant, since those are named only from the shape they have, very similar in fact to that of the truffle.

I suggest Acacia Honey and Truffle, a delight for the palate. Sweet and with an appetizing flavor! It's delicious with fruit, but also just spread on a slice of toast for breakfast!
Actually, even accompanied with cheese it's no joke! In short, a product that goes well with everything, sometimes just a little imagination is enough.

Another sweet treat is certainly the Raspberry Truffle Specialty, which combines the sweet and sour taste of raspberry with fresh summer truffle.
The interesting combination of these two ingredients makes it perfect for decorating and embellishing desserts. It also goes very well with cheeses.

And finally, finally, I wanted to reserve the place for the king of black gold, that product that is so versatile that it can be used in a thousand different ways and dishes: extra virgin olive oil with truffle!
With this multipurpose ingredient you can season pasta, rice, but also roasted white meat. Also try to spread a drizzle of this oil on a cut of red meat... you'll see how good it is! In addition, if you put it on baked potatoes, it will give a special flavor even to a simple dish.

I feel like I gave you some advice, in fact, maybe I got carried away a bit... But you know how it is, when an ingredient is like this... I don't even know how to describe it anymore! Let's do this, try some of the products I presented to you, you can find them all in the Spaghetti
