The two are on a “Gita Scolastica” or “Field Trip” exploring the wines around Talana and Galtellì along the east coast of Sardinia, facing the Tyrrhenian Sea. They are guests of Sella & Mosca, a historic winery founded in 1899. Today the winery has over 550 hectares of vineyards and is one of the most important wine producers in Sardinia.

After taking a geological tangent exploring the significance of the Sardinian fault systems and the formation of the metamorphic rock layer schist that influences viticulture and wine in the region, the professor continues explaining the difference between the local Vermentino di Gallura and the comparable Vermentino di Liguria from the mainland, which tends to have a more mineral character. Vermentino, a light-skinned grape variety common both in Sardinia and Liguria, is enjoying particular popularity in America right now, and the professor also explains why the grape is harvested twice. The resulting Vermentino di Gallura is a delightful pale white wine with bright refreshing acidity and hints of green apple, citrus, and ripe pear. It is the only wine in Sardinia to have achieved DOCG status.
The professor also reveals the five best lessons on Sardinian wine from this "Gita," including tips on where to look for authentic Sardinia, beyond the well-known tourist destinations, and the uniqueness of Sardinia's culture and history, things that students may not have appreciated before, but which they now have an obligation to share around the world!
Finally, to savor the authentic taste of Sardinia, the professor explains that you must try porceddu, a typical whole spit-roasted pig. If you’re still hungry afterwards, the professor recommends the typical fregola sarda, a local dish that looks very much like couscous, but is actually a type of Italian pasta. The professor also recommends the wide variety of Sardinian cheeses and the mouth-watering range of sweets and desserts made with local almonds and honey, all washed down with a light and floral Vernaccia di Oristano.
