The Adige can be considered as the Nile of Verona as it has fostered the agricultural development of the entire Scaliger territory, thanks to the water supply guaranteed over the centuries and the alluvial stamp it has given to the land.
Thanks to the sandy soils that border the river and the poor land due to the high drainage, the cultivation of asparagus has found a particularly favorable ground here to take root, as it suffers from excess water. This element, along with the temperate microclimate also guaranteed by the Adige and the specialization that farmers have gradually developed, has given rise to what can today be considered a true agro-food specialty of Verona, namely the asparagus of Verona, for the protection of which about twenty years ago the homonymous enhancement consortium was also established. A long story summarized in an emblematic product of the rural evolution of the lands of the Adige, which shows no signs of slowing down; indeed, there is now a push for further recognition of protection (dop or igp) that will allow this product to further consolidate its quality on the market.
From both a territorial and historical perspective, asparagus is also an exemplary product on the nutritional front, being rich in vegetable fibers, minerals, folic acid, and vitamins it is a boon for detoxifying our body.
