Between the provinces of Verona and Vicenza, there is a village where time seems to have truly stood still, as the spirit with which our ancestors created flavors and harmonies continues even today, in the digital age of depersonalization.
Here in Brenton, a fraction of Roncà, there is a hidden treasure made of families and...cellars. In the cool rooms of the houses adjacent to each other you can find, hanging from the ceiling, sopresse and cured meats made artisanally like in the old days, as taught by the elders. The village lends its name to the Sopressa de Brenton, typical as a starter or as a main dish with a warm grilled yellow polenta.
But it is always families that make these delicacies, the same ones that, just like in the past, bake bread in the local oven. A beautiful ritual, imbued with the sense of sharing a sacred food like bread, prepared in the famous (around here) version of "pan biscoto", meaning baked twice to achieve the classic crunchiness that pairs so well with sopresse.
The classic pairing? Without a doubt, a good durello, the typical wine of the area, with a bold, mineral flavor, rich in personality.
