Storing cheese in the fridge: 10 tips to do it

How many times have you had to throw away pieces of cheese, even precious ones, because you couldn't finish them before they started to spoil?
And how many times have you felt frustrated and guilty for doing something that goes against your principles?

Many times, the packaging in which cheese is sold (discover the cheeses available on the portal) isn't even suitable for keeping the cheese fresh for more than a few days. However, thanks to technology, more and more suitable solutions are being developed.

But how do I know how to handle cheese when I buy it? How much should I get? Where should I store it? How should I keep it to ensure it lasts longer?

Let’s start with this: each type of cheese requires different treatment. We can't treat aged cheese like Parmigiano Reggiano PDO, blue cheese like Gorgonzola PDO, and fresh cheese like Stracchino in the same way.

Ten tips for storing cheese in the fridge

  1. Fresh cheeses should be kept in the coldest part of the fridge (2-4°C).
  2. Other types of cheese should be stored at temperatures between 6 and 8°C.
  3. Avoid unnecessary temperature changes, as they can increase the microbial load, especially pathogenic ones.
  4. Never store cheese in the freezer. Freezing ruins the organoleptic and structural qualities of cheese.
  5. Always prefer aluminum foil over plastic wrap.
  6. The PVC in plastic wrap is rich in phthalates that can transfer to the cheese, increasing its elasticity.
  7. Use waxed paper and ensure it’s tightly wrapped around the cheese to prevent unnecessary and harmful oxidation.
  8. Store fresh cheese in the vegetable drawer of the fridge.
  9. Separate different types of cheese slices with dedicated wrapping for each.
  10. Always take cheese out of the fridge an hour before serving. This is important to ensure you enjoy all the aromas and flavors.

An eleventh tip for storing cheese
All of this works only if you avoid buying excessively large pieces of cheese. Get just enough for a week at most.
