Shortly before the weekly deadline, I will reveal the correct option on Spaghetti & Mandolino along with the reasoning behind the choice and a quick wine education; below is the solution to last week’s quiz.
Last week’s quiz:
"Do you know the technique known as "salasso" or "saignée"? It is used to produce which type of wine?"
A) Sweet wines
B) Red wines
C) Rosé wines
D) White wines
The correct answer was C (rosé wines), chosen by 70% of participants.
Reason for the choice: The salasso method is used to produce rosé wines (both still and sparkling) - see chart - but the saignée method is also considered a byproduct of red wine production; the salasso (removal of must for rosé wine production) increases the concentration of the remaining red wine: as a result, the remaining red wine has a stronger, darker color and a greater concentration of aromas. In other words, the saignée method creates a win-win situation: exceptional rosé wines and exceptional red wines as a byproduct.
