From which region does it come and with which grape(s) is it made?
this week's quiz was a bit more difficult than many of you suspected. It was necessary to recognize a fundamental detail in the question: it was not talking about Vin Santo, but about VinO Santo! The home of VINO SANTO is Trentino and the white grape used to produce it is Nosiola.
The Vino Santo from the Trentino is born between Trento and Lake Garda, in the Valle dei Laghi. It proudly carries the designation of #SlowFood and is also called “passito dei passiti,” because it boasts a very long natural drying. Its history in brief: after the late harvest in October, the grapes are dried in the so-called “arèle” (grates) for the drying process. Thanks to the sun and the winds (from the Garda), they lose up to 80% of their weight, also due to the formation of #botrytiscinerea (noble mold).
The following spring, right in Holy Week, the pressing ritual is carried out; from this tradition, it takes its name “Vino Santo”.
The wine is left to mature in small barrels for at least six to eight years, as long as the natural fermentation process can last.
After bottling, this wine has a very long life, it can be preserved for up to 50 years.
