The idea of delivering fresh meat from Simone Fracassi all over our country through Spaghetti&Mandolino came during a beautiful event held in Verona, specifically about the promotion of Chianina IGP. When we asked him to start a collaboration that would allow everyone to enjoy this delicacy, Simone responded with a "Tuscan yes," that is, without many words!
And so, the project will be active starting November 20th. Two Chianina IGP meat packages will be available, not only containing the legendary Fiorentina but also other cuts. As Simone always says, "The Tuscan butcher doesn’t live by Fiorentina alone..." From one cow (yes, it's called a cow, not a heifer!), only 6 or 7 Fiorentinas can be cut. So, we decided to offer a 5kg and a 10kg package at an exceptional price.
The meat will be cut directly by Simone and vacuum-packed by him personally! A guarantee of unique and unmatched quality. Simone is recognized as one of the finest and most authentic butchers in Italy, a purist, and a passionate promoter of his homeland, Casentino. A man who does not compromise and who speaks out against the use of meats from other countries, which are then falsely labeled as Chianina. In short: ONE OF US!

Simone Fracassi is Italy’s butcher of Chianina IGP. He calls himself "the man of meat!" To everyone else, he’s the one who amazes you every time with his extraordinary meat. A life spent among sides of beef, carcasses, and plenty of meat. An adventure that takes place in the town of Rassina, in the wild and ancestral territory of the Casentino Forests. We’re in the province of Arezzo, and Simone is a significant ambassador for this land. An excellent communicator, he has brought Chianina to the world’s most prestigious stages. Simone taught us that a Chianina butcher doesn’t live by Fiorentina alone, but by all that can be derived from it. And so, we have the Malenca, ground meat, tagliata, mixed boiled meat, Chianina Nero, Chianina Bianco, stew, tripe, hamburgers… Simone shows us how to give value to the entire cow. His cows, by the way, have a noble origin. They are raised, in every sense, on the pastures of Michelangelo’s hometown. In Cortese Michelangelo, you will find the stable with Chianina cattle, raised only on selected forage according to ancient Tuscan traditions. Over time, Simone Fracassi has built a strong group of outstanding culinary artisans who gather every year at one of Italy's most important gourmet events. Packaging Simone Fracassi has extensive experience in packaging meat and shipping it for his many promotional activities and events across Europe and beyond. All the meat will be vacuum-packed. The vacuum-packed packages are placed inside a food-grade bag. The bag containing all the vacuum-sealed packages is then placed inside a thick Styrofoam container with a hermetic seal. Two vacuum-packed ice packs are added inside the Styrofoam container to maintain the temperature during shipment (within 24 hours). Finally, the Styrofoam container is sealed and placed inside a thick cardboard box with a hermetic closure. Ready for shipment!
What to do when the package arrives… It depends. If you have an upcoming event or dinner and the meat will be consumed soon, you can put the vacuum-sealed meat directly in the refrigerator. If, as is more likely, the meat will be consumed over time, the vacuum-sealed packages should be placed immediately in your freezer. For those who have a blast chiller, first freeze the meat. Whenever you’re ready to use the meat, it is recommended to defrost it naturally or use a microwave following the instructions of your appliance.
How long does it take to arrive? The meat is shipped directly from Rassina (AR), from Simone Fracassi's butcher shop, every Monday morning and arrives anywhere in Italy within 24 hours. The packaging guarantees freshness for up to 48 hours.
How to order You can place your order during the week until Thursday at 6:00 pm. After that, we send the orders to the butcher shop, which will prepare the product and ship it the following Monday.
Maximum quantity Since Simone Fracassi's meat supply depends solely and exclusively on his farms, we cannot request quantities beyond certain limits. These quantities are reserved for Spaghetti&Mandolino. Normally, there will be a maximum of 20 packages available in total between the two types. So, the first 20 people to order each week will secure the shipments. Others will be placed on a waiting list for the following week.
