The idea of bringing fresh meat from Simone Fracassi throughout our country thanks to Spaghetti&Mandolino came during a beautiful event held in Verona, focusing on the promotion of Chianina IGP. When we requested to start a substantial collaboration that would allow everyone to savor this delicacy for all palates, Simone responded with a “Tuscan” yes, meaning without many words!
 
And thus the project is set to launch on November 20th. Two packages of Chianina IGP meat containing not only the legendary Florentina but also other cuts. Because as Simone always says, “no Tuscan butcher lives on Florentina alone…” This means that from one cow (oh yes, it's called a cow, not a heifer!) only 6 or 7 cuts are obtained, and what about the rest? So we decided to offer a 5 kg package and a 10 kg package at an exceptional price. 

The meat will be cut directly by Simone and vacuum-packed by him!

SIMONE FRACASSI: ITALY’S BUTCHER OF CHIANINA IGP


Simone Fracassi is Italy's butcher of Chianina IGP. He defines himself as the man of meat! For everyone, he is the one who manages to amaze you every time with his extraordinary meat. A life spent between quarters, halves, and plenty of meat. An adventure that takes place in the village of Rassina in the ancestral and wild territory of the Casentino Forests. We are in the province of Arezzo, and Simone is a substantial ambassador of this territory. An excellent communicator, he has brought Chianina to all the most prestigious international stages. Fracassi is a distinctive brand of Tuscan and Italian quality. An example of the value of ancient artisan shops that remains intact. His passion is evident in his eyes that light up when discussing Chianina, all of Chianina IGP, not just the Florentina.

Simone has taught us that a Chianina butcher does not live solely on Florentina, but on everything that can be obtained from it. And here comes the Malenca, ground meat, tagliata, mixed boiled meat, Nero di Chianina, Bianco di Chianina, stews, tripe, hamburgers... in short, Simone teaches us to value the entire cow. His cows, among other things, have noble origins. They are raised, in every sense, in the pastures of Michelangelo's homeland. In Cortese Michelangelo, in fact, there is the barn with Chianinas that are raised only with selected forage according to ancient Tuscan customs. Simone Fracassi has managed over time to build a strong group of great taste artisans who gather every year at one of the most important Italian gourmet events. Capolavori a Tavola is an event held in June that showcases the best of Italian cuisine but, above all, provides an opportunity for Fracassi to carry out important charitable actions for Italian volunteer associations. 

Beneath the untamed, wild Arezzo attire lies a gentle soul that captivates you with the exceptional quality of products that tell the story of all Fracassi's passion and great professionalism. The Packaging
Simone Fracassi has a long experience in meat packaging and shipping for his numerous promotional activities and events held all over Europe and beyond. All the meat will be vacuum-packed. The vacuum packages are placed inside a first food bag. The food bag containing all the vacuum packages is then inserted into a thick polystyrene container with an airtight closure. Inside the polystyrene container, two packages of vacuum ice are added to maintain the temperature during shipping (within 24 hours). Finally, the polystyrene container is closed and placed inside a thick cardboard food container of the same size, sealed airtight. Ready for shipping and… away!
 
What to do when the package arrives…
It depends. If you have an upcoming party, event, or dinner and the meat needs to be consumed, you can place the vacuum-packed meat directly in the refrigerator. If, however, and it will probably be the case most of the time, the meat will be consumed over time, the vacuum packages should be placed immediately in your freezer. Anyone with a blast freezer should first freeze the meat. Whenever the meat is to be consumed, natural thawing is recommended, or thawing in the microwave following the instructions of your appliance.
 
How long does it take to arrive
The meat is sent directly from Rassina (AR), from Simone Fracassi's butcher shop every Monday morning, and arrives throughout Italy within 24 hours. The type of packaging ensures even longer times, up to 48 hours.
 
Purchasing methods
The meat can be reserved during the week until Thursday at 18:00. After that, we send the reservations to the butcher, who will prepare the product and ship it the following Monday. 
 
Maximum quantity
Since Simone Fracassi's meat supply depends solely and exclusively on his farms, we cannot ask him for quantities that exceed certain numbers. Quantities that have been reserved for us at Spaghetti&Mandolino. Normally, a maximum of 20 packages in total of both types together can be had. Therefore, the first 20 who reserve each week will secure the shipments. Others will remain on a waiting list for the following week's sending.
