Cherries vs Sour Cherries: a pit battle!

Botanical differences between cherries and sour cherries


Although similar and part of the same botanical family, cherry and sour cherry trees have notable differences.

The Prunus Avium, also known as sweet cherry, is the tree from which cherries and duroni are born. This species boasts numerous varieties, especially in Italy, including the Moretta di Vignola IGP, Ferrovia cherries, and those from Marostica, among the most famous.

On the other hand, the Prunus Cerasus, or sour cherry tree, is responsible for the production of sour cherries, visciole, and marasche.

Looking closely, further differences can be seen between cherries and sour cherries: the latter tend to be smaller, and their red color is generally lighter and more delicate.
 

Tasting characteristics 

Cherries and sour cherries, although closely related fruits, offer completely different tasting experiences that reflect their botanical characteristics.
 

Cherries are renowned for their sweet and rich flavor, with a slightly tannic aftertaste that can vary depending on the variety. Their flesh is juicy and abundant, making them a popular choice to be eaten fresh right off the branch. The sweetness of cherries also makes them suitable for refined desserts, such as cakes, clafoutis, or ice creams, where their flavor can shine without overwhelming.
 

On the other hand, sour cherries exhibit a decidedly more complex flavor profile. Characterized by a pronounced acidity and bitter notes, these cherries are not commonly enjoyed fresh but are excellent in preparations that require cooking or preservation. The intensity of their flavor makes them ideal for jams, preserves, and liqueurs like Maraschino. The robust flavor of sour cherries also beautifully contrasts with sweeter desserts, such as tarts or spoon desserts, where their acidity can balance the sweetness of other ingredients.


The cherries with their benefits


Cherries are much more than a delightful summer fruit; as we have already mentioned, they offer a myriad of health benefits thanks to their rich nutritional content. This small round fruit not only delights the palate but is also a powerful source of essential nutrients that promote overall health.

Essential Minerals: these fruits are also a good source of vital minerals such as calcium, important for bone health; potassium, which helps regulate blood pressure; magnesium, which supports over 300 biochemical functions in the body; and phosphorus, which contributes to the regeneration of cells and tissues.
 

Antioxidant and Cholesterol Benefits: cherries are packed with flavonoids and antioxidants, including those that combat skin aging caused by free radicals. These compounds also help to reduce blood cholesterol levels, thus protecting the heart. The malic acid present in cherries stimulates liver activity, enhancing detoxification.
 

Benefits for Diabetics and Digestive Properties: levulose, a sugar present in cherries, is ideal for diabetics as it has a lesser impact on blood sugar compared to other sugars. Additionally, cherries have diuretic and slightly laxative properties that help keep the intestine clean and prevent water retention, promoting good digestion and helping to stay fit.
