Chocolates: history and information

Chocolates: not just dark chocolate

Although the bitterness of dark chocolates is an excellent note with which to end a meal, there are many other types of chocolates that are just as delicious, such as milk or hazelnut chocolates!

The easiest type of chocolate to identify is white chocolate, with its typical cream color. It is a predominantly sweet chocolate, with light notes of milk and vanilla. Its texture is creamy and rich, characteristics given to it by its cocoa butter base. Its sweetness is perfectly combined with flavors such as that of slightly salty pistachio, forming a light and balanced contrast

Milk chocolate is the most classic chocolate, generally preferred by children. Light brown in color and with an inviting scent, it has a sweetish taste with notes of caramel and a vanilla aftertaste. However, each type of chocolate is different and may have different references, depending on the cocoa used

Gianduia chocolate, on the other hand, is an Italian invention, with origins in Turin. In this case, the hazelnuts are used in small pieces and then roasted and reduced to a powder into a very fine powder, in order to obtain a creamy mixture. Gianduiotto is the ultimate gianduia chocolate, with its rectangular prism shape and creamy flavor

The different types of chocolates

Along with the various types of chocolate, there are also different types of chocolates with their own stories and characteristics.

Chocolate truffles, for example, are truffle-like chocolates made from eggs, butter, cocoa and chocolate. They are often mixed with other ingredients such as almond kernels or hazelnuts, giving them a crunch. The cremini, on the other hand, have a characteristic cubic shape and three layers, including two of gianduia, which wrap the central one in almond paste. Today, the original recipe has been revisited in various ways, using hazelnut or coffee chocolate, for example. Finally, the Cuneesi are chocolates with a dark chocolate shell, with a soft cocoa and rum cream inside
