If I had to put this inspiration among the favorites of &' summer would be in pole position. Why? Simple, bresaola is one of the charcuterie that best matches l&' summer, and then let's combine it well and it becomes a viral dish. Bresaola della Valtellina obviously sliced quite finely at the moment, at &' instead of the usual cheeses, I chose an equally fresh but tasty cheese such as 'double cream'. Also of this a thin slice, drizzle of extra virgin olive oil, hand-chopped chives and if there is l&' you have lemon thyme leaves. Close the slice by rolling it up, another round of extra virgin olive oil and seal it with a whole drizzle of chives

that will also serve as decoration.

A very tasty, fresh, summer, refined, beautiful to look at dish that can be the starter of any lunch or the main course.
What wine to pair with us? Definitely a bubble, maybe a Franciacorta or a

Trento DOC.
