The production of mountain milk, in fact, involves the provinces of Brescia, Bergamo and Sondrio, in particular. This is where real works of dairy art come from. Bagòss, for example from the mountains of Brescia, is a cheese produced using saffron inside, with an intense yellow paste, extremely suitable for aging. Then we arrive at Valtellina and the valleys of the province of Bergamo. When we talk about this high valley on the border with Switzerland, one of the most prestigious Italian cheeses immediately springs to mind: Bitto DOP. An incredible cheese that still sees irreducible shepherds and cheesemakers, those of the Historical Ribelle, who escaped the denomination to continue over the centuries with the true cheese tradition typical of Valtellina in the high mountains. There are many other typical cheeses of the province of Bergamo. The Taleggio DOP of Valtaleggio, the Forami de Mut dell'Alta Val Brembana DOP, the Strachitunt DOP. Then the Salame Brianza DOP, the Cremona IGP, the famous Salame d'Oca di Mortara IGP that recovers the ancient medieval tradition of that city. Another typical Pavia sausage is Salame di Varzi DOP.
The Lombard lakes of Como, Lecco and Maggiore also have their PDO. In fact, thanks to a Mediterranean climate, mitigated by the waters of the basins, oil production and olive cultivation have been preserved. A legacy of the ancient Benedictine and Cistercian abbeys that made post-barbaric agriculture flourish again. The only recipe that is certified are the extraordinary Pizzoccheri della Valtellina IGP in the province of Sondrio. Lombardy is also an incredible universe of traditional products and Slow Food Presidiums.
