We are in Troia, a town rich in history and art in &' the Foggia hinterland. E&' Puglia is the land we know for its high-quality productions of agri-food products such as wheat, l&' extra virgin olive oil and the production and processing of the highest quality meat. In this town for six generations there has been the Giannelli family butcher shop, now run by Raffaele. A pearl of &' Italian excellence in quality meat.

Giannelli cold cuts: typical Apulian delicatessen

A reference point for typical Apulian charcuterie, recognized nationally, so much so that it earned first place among Apulian sausages in 2014 and in the top 20 places in the Italian Salami Championship. A long history of passion and respect for tradition. Only Italian meat coming mainly from a Roccia di Ariano Irpino farm. All charcuterie is produced without any type of preservatives. In the &' label you will never find initials such as E252, E250, E300. Raffaele Giannelli wants to make known this choice that has made him a pioneer at

the national level.

Where are the animals raised

The animals come mainly from a farm in Roccia di Ariano Irpino, in the province of Avellino, in high altitude. All products for l&' nutrition derive from own production, sufficient to guarantee the needs of pigs raised

in the wild.

Giannelli cold cuts: cold cuts without preservatives

E&' the philosophy of &' company. Raffaele Giannelli studied and his training l&' he dedicated above all to the research of technologies that would completely eliminate preservatives from meat. So to the various initials mentioned above, corresponding to various types of chemical compounds, Giannelli has replaced natural preservatives as our ancients did. And here are ingredients such as honey, wine, garlic, sweet pepper. Thanks to the collaboration with &' University of Milan, the Giannelli have recovered ancient recipes dating back to Umbrian butchery before 1920 (the year in which the potential of nitrates was discovered). With this research, we have returned to producing cold cuts as they used to be done.

Lactose-free and gluten-free cold cuts
All Giannelli family products are lactose-free and gluten-free and therefore particularly suitable for an intolerant public to these two allergens that are increasingly common among the population.

Knife tip cut only
They are handmade products with a much higher weight loss than industrial ones and this involves a higher final cost. In addition, the fat is cut at the tip of a knife and therefore may seem to be quantitatively larger. It's not like that!

By cutting at the tip of a knife, fat also acts better as a preservative.
