Guffanti Luigi Formaggi

The Guffanti family has been refining its cheeses in Arona, in the province of Novara, since 1876: Carlo Guffanti Fiori, along with his sons Giovanni and Davide, represent the fourth and fifth generations. The founder was named Luigi, whose gaze was lost in the visionary dreams of quality food. 

His "coup" was purchasing a discarded silver mine in Valganna, in the province of Varese, capable of producing a white gold that was by no means inferior to precious metals. Down there, at a constant temperature and humidity throughout the year, the cheese matured so well that Luigi quickly conquered the markets: his sons Carlo and Mario, at the beginning of the twentieth century, exported as far as Argentina and California, lands of Piedmontese and Lombard emigration. Luigi also founded the Arona cellar under a bastion of the city walls, in a space initially intended for military use, repurposed with the ingenuity of a dowser.

With his sons Carlo and Mario, Guffanti cheeses began to follow in the footsteps of the emigrants who, at the beginning of the twentieth century, were flowing towards America. New markets for new products, because the frontier from Gorgonzola was shifting to conquer the tomes of the Ossolan Alpine pastures and Parmigiano Reggiano, and more recently, to seize the finest types from European markets.
