Three friends founded in June 2006 l&' company 32 Via dei Birrai in Pederobba (TV). They are Loreno Michielin, commercial expert, Alessandro Zilli, an engineer passionate about homebrewing and Fabiano Toffoli, master brewer. Coming from different cultural and professional backgrounds, they shared the same idea: brewing beer in a new, innovative way, and then creating a craft brewery that spoke a different language in the beer scene.
Why the name 32 Via dei Birrai?
Because 32 is the number corresponding to the class to which beer belongs, according to the international classification of Nice, which indicates and categorizes products and services. Via dei Birrai, on the other hand, because in Brussels c&' it is a Rue des Brasseurs, the street of brewers. In fact, Fabiano lived in Belgium, his mother's country, until &' age sixteen, and then moved to Italy and completed his studies in agronomy. But c&' is also an abstract meaning in this name: the path understood as a path, and the circle of the logo takes up the concept of eternal movement towards becoming, a continuous and perpetual motion.
A perfect equation between taste and design is the corporate philosophy of 32 Via dei Birrai, as well as the right balance between research and method, without ever encroaching on industrial massification. 32 Via dei Birrai represents a new language in the infinite panorama of the brewing world. Reset and redefine the usual. It decontextualizes the usual concept of 'beer'. It becomes a design worn by a bottle. It is the experimentation of a territory beyond banality: from the choice of the container to the graphic design, from the proposal of culinary combinations to the selection of places intended for sale. In this way, beer becomes an abstract concept enriched by color, which attracts and ignites the eye, projecting it into a soft and somewhat mysterious atmosphere. For fun or pleasure, this is in any case a reinterpretation of the brewmaker style, which wants to change the way we perceive beer, opening it up to complementary worlds.
The philosophy of 32 Via dei Birrai goes a long way into environmentally friendly logic. Loreno, Alessandro and Fabiano intervene a lot at various levels to reduce waste and optimize processes. At the base of this conduct there is above all a very strong commitment to research, not only to constantly improve the quality of beers, but also to innovate the production process with an environmentally sustainable perspective: in recent years, these improvements have led to a 40% reduction in water consumption. In addition, since 2015 they have been using only certified energy from renewable sources and CO2 emissions for the production of glass have also been reduced by 25% in the production of the new bottles with the writing Braille written
on them.
32 Via dei Birrai: craft and unpasteurized beers
The beers of 32 Via dei Birrai are craft beers because they are produced in small quantities and mainly by manual processing (all bottles are taken by hand at least 3 times). Finally, we must not forget the high professional creativity in the formulation of recipes. In this sense, the attentive consumer can see the difference, for example, between batches of the same type: 32 beer is never standardized.
The beers are all unpasteurized, i.e. not thermally treated during conditioning; refermented in the bottle, which determines the characteristic deposit of yeast on the bottom, the intense aroma and the delicate saturation; unfiltered andhighly fermented (between 15 and 25 degrees).
