Three friends founded the company 32 Via dei Birrai in June 2006 in Pederobba (TV). They are Loreno Michielin, a sales expert, Alessandro Zilli, an engineer passionate about homebrewing, and Fabiano Toffoli, a master brewer. Coming from different cultural and professional backgrounds, they shared the same idea: to brew beer in a new, innovative way and thus create a craft brewery that spoke a different language in the beer landscape.
 

Why the name 32 Via dei Birrai?


Because 32 is the number corresponding to the category of beer, according to the international Nice classification that indicates and categorizes products and services. Via dei Birrai, on the other hand, is because in Brussels, there is a Rue des Brasseurs, the street of brewers. In fact, Fabiano lived in Belgium, his mother's country, until he was sixteen, and then moved to Italy to complete his studies in agronomy. But there is also an abstract meaning in this name: the street understood as a path, and the circle of the logo captures the concept of eternal movement towards becoming, a continuous and perpetual motion.

A perfect equation between taste and design is the corporate philosophy of 32 Via dei Birrai, as well as the right balance between research and method, always avoiding crossing into industrial massification. 32 Via dei Birrai represents a new language in the infinite landscape of the beer world. It resets and redefines the usual. It de-contextualizes the usual concept of “beer.” It becomes design worn by a bottle. It is the experimentation of a territory beyond banality: from the choice of the container to the graphic design, from the proposal of culinary pairings to the selection of places intended for sale. In this way, beer becomes an abstract concept enriched however by color, which attracts and ignites the gaze, projecting it into a soft and somewhat mysterious atmosphere. For play or pleasure, it is nonetheless a reinterpretation of the brewmaker style, which aims to change the way beer is perceived, opening it up to complementary worlds.

The philosophy of 32 Via dei Birrai delves deeply into eco-friendly practices. Loreno, Alessandro, and Fabiano intervene significantly at various levels to reduce waste and optimize processes. At the heart of this conduct is an extremely strong focus on research, not only to constantly improve the quality of the beers but also to innovate the production process with an eye to sustainability: in recent years, such improvements have led to a 40% reduction in water consumption. Additionally, since 2015, they have used only certified energy from renewable sources, and CO2 emissions for glass production have been reduced by 25% in the production of new bottles with Braille writing.

 

 

32 Via dei Birrai: craft beers and unpasteurized


The beers of 32 Via dei Birrai are craft beers because they are produced in small quantities and mainly through manual processing (all bottles are handled at least 3 times). One should not forget the high professional creativity in formulating recipes. In this sense, the attentive consumer can notice the difference, for example, between batches of the same type: beer 32 is never standardized.

All beers are unpasteurized, meaning they are not heat-treated during conditioning; refermented in the bottle, which results in the characteristic yeast sediment at the bottom, the intense aroma and delicate saturation; unfiltered and top-fermented (between 15 and 25 degrees). At 32 Via dei Birrai, they let time take its course: to make a beer from the start of the production process to its distribution, they allow 6 weeks to pass.
