In 1938 in Fregona, in the upper Treviso region, the Cooperativa del Cansiglio was founded. A reality that continues today and that brings together all the shepherds and small producers of this area of Veneto. For some time it was a turn-based dairy farm; in practice, milk producers could bring their product here, have it worked by the cheesemakers and then sell it privately.
Where is Agricansiglio located?
Il Cansiglio is a beautiful area on the slopes of the Cansiglio Forest, an uncontaminated area where pastures are rich in flowers and rare botanical species. Here comes only milk from members from the provinces of Belluno, Treviso and Pordenone. About fifty members belong to the Cooperative. We chose Moesìn di Fregona, which is the product with whole cow's milk most typical of mountain families. A cheese that lends itself very well to typical mountain cuisine, due to its melting qualities and the lactic pleasure it releases, for example, with polenta and stuffed with lasagna and tortelli.
