The province of Verona has always been recognized as one of the most important in Italy for the production of cereals. In particular, the plains to the southeast of the city are still rich in water and ancient mills that reflect the rice processing technique. Between Zevio and Bovolone there are still ancient names such as Pila de S.Maria, Pila Brusà, Pila Vecia and other names of mills that indicated a specialization of those specific places in the processing and piling of rice. Today, rice fields have given way to fruit and vegetable crops, apples, pears, peaches and strawberries. But, from Bovolone to Isola della Scala and on the border with the Zevian territory, the first contemporary rice fields begin to produce one of the most valuable Italian rice: the Vialone Nano Veronese PGI Rice. Among these there is also the prestigious Riseria Cremonesi. The Riseria Cremonesi di Bovolone started its activities after the war: the passion and technical knowledge of Egidio Evelino Cremonesi allowed the development of this historic reality. The work done by Egidio has always been to develop local farms and to initiate farmers to rice production. The Cremonesi family was the first in the area to develop processing techniques, becoming, at the end of the 90s, one of the most important realities in the entire province of Verona. Today, the sons Paolo and Andrea are carrying on this reality with an eye to changes in the national and international markets. The quantities of rice processed have been reduced and the focus is on the maximum selection of the product, in collaboration with production companies in the best Italian and Eastern territories. New packaging, packaging techniques to guarantee the freshness and healthiness of the final product, research and innovation towards new formats and concepts of using rice on the table.
