The name Zýmē comes from Greek and means “yeast”, a fundamental element in the world of winemaking, but also a symbolic element that evokes naturalness, a basic value in the professional and existential journey of Celestino Gaspari, and fermentation, understood as a continuous attitude towards transformation. In harmony with this philosophy, the company logo represents a vine leaf in which a pentagon is inscribed, symbolizing the five main elements for wine production: man-vine-earth-sun-water.
Restoring a perfect habitat where man and nature are in perfect symbiosis is, in fact, the starting and ending point of a new humanism of the land, of which Celestino Gaspari and Zýmē are bearers, aiming to establish a renewed relationship with the environment where man is the natural guardian of the territory: the one who protects it, but also the one who is able to renew it, reinterpreting it.

The vineyards of Zyme
The Zýmē company has adopted over the years a widespread structure, cultivating vineyards and olive groves scattered throughout the Veneto region, with particular concentration in Valpolicella, in the Veronese area and the province of Vicenza.
The choice of such a rich variety of lands reflects the company philosophy that has its pillars in research, curiosity, and experimentation. The current basket of lands comes from different situations (some lands are family-owned, others purchased, still others governed by collaboration contracts) and aims to reflect and express the richness of the territory through particular soils and microclimates linked to individual plots.
Such disparate cultivation areas represent for Zýmē a continuous source of wealth and challenge and allow it to best express its multifaceted project that sees wines like Kairos, derived from fifteen grape varieties, as the flagship products of the brand.
