The name Zýmē comes from Greek and means' yeast ', a fundamental element in the world of oenology, but also a symbolic element that recalls naturalness, a basic value in Celestino Gaspari's work and existential journey, and ferment, understood as a continuous aptitude for transformation. In keeping with this philosophy, the company logo represents a grape leaf in which a pentagon is inscribed, a symbol of the five main elements for the production of wine: man-vine-earth-sun-water.

Zyme's vineyards
Over the years, the Zýmē company has adopted a widespread structure, cultivating vines and olive groves scattered throughout the Veneto territory, with particular concentration in Valpolicella, in the Veronese area and the province of Vicenza.
The choice of such a rich variety of soils reflects the company philosophy, which is based on research, curiosity and experimentation. The current basket of land comes from different situations (some land belongs to the family, others purchased, others still governed by collaboration contracts) and wants to reflect and express the wealth of the territory through particular soils and microclimates linked to individual plots.
