Domori's story begins with a dream, that of going straight to &' the soul of chocolate and going where no one has ever gone. L&' Piedmontese company has succeeded: Domori is in fact the first company to process only fine cocoa, or aromatic cocoa. The presence of man is as important as that of the raw material and the attentive and expert hand of Domori technicians is able to ensure that the aromatic diversity of cocoa is maintained and emphasized in the final products.
In None, in the province of Turin, cocoa is transformed into Domori chocolate. The Turin plant was designed and built to preserve the sensory identity of the different varieties of cocoa when transformed into extra chocolate. Here come the bags of aromatic cocoa. It is a heart with a low impact on cocoa, because the Domori process is based on the use of low temperatures and few machines
.
Criollo: the rarest cocoa from Venezuela
Domori's exotic heart, however, is located in Paria, Venezuela. Here is the Hacienda San José, where more than 300 hectares of land are cultivated, of which 185 are grafted with cacao. This land is a world heritage site because it gives us back the taste of Criollo cacao. It is the first and most important center in the world for the recovery of its biodiversity and for its cultivation. Criollo is a variety of cacao that has risked becoming lost: it is the cacao of the Mayans and Aztecs, whose cultivation has been gradually abandoned due to its low production yield. It is a rare and fragile cocoa and represents only 0.001% of the cocoa produced in the world. Yet the quality of this cocoa is unparalleled: being free of tannins, which give the product acidity and astringency, Criollo has a creaminess, roundness and sweetness unique in the
world.
Domori and the control of &' entire supply chain
For Domori, the control of the entire supply chain is an indispensable value: all the cocoa used is selected thanks to the skills developed within the company, whose role is to verify that the raw material always meets sophisticated quality standards. For each type of cocoa purchased, Domori identifies an interlocutor with whom he signs a pact of mutual trust. Each type of chocolate is in fact made using cocoa from specific plantations selected to be in line with Domori quality standards
.
Domori's certifications
BRC (British Retail Consortium) and IFS (International Food Standard): two fundamental international standards for the certification of food quality and safety. With the certification as an operator in the organic sector, Domori also intends to emphasize its commitment to the environment and to the quality of production. Finally, Domori has adopted a system for managing the gluten-free requirement, which, through risk analysis and product and raw material control (production program, raw material evaluation, sampling plans), guarantees a product suitable for celiac consumers
