Trota Oro

Trota Oro was founded by Vittorio and Lucia Leonardi in 1988 with a production of smoked trout according to an ancient traditional recipe. Their products are unique thanks to the high-quality raw materials, namely alpine salmon, marinated trout, fresh trout fillet, marinated alpine char, and finally trout roe and bottarga. 
Some of Trota Oro's secrets include the slow growth of fish in cold, pure waters, the use of natural feed, smoking done with sweet beech wood, hand and dry salting with sweet salt from Cervia, and the processing takes place according to recipes refined by time and experience.

The processing phases of the fish are carefully controlled and strictly adhere to the artisanal tradition without the use of coloring substances and chemical preservatives. The fish is of high quality because Trota Oro has managed to create a breeding of trout and char in the Adamello Brenta Park where the waters are clear and fresh without contamination. Trota Oro therefore presents itself as a creator of high-quality products, often used in premium gastronomy because it guarantees quality.
