When tradition,passion and love for “good things” meet the freshness of green pastures and the most unspoiled nature, the products of Alpe del Garda are born, unique flavors capable of gifting every taste with an unforgettable experience. The Alpe del Garda Cooperative, located in Tremosine sul Garda, has been enhancing the typical agricultural productions of the area in the heart of the Parco Alto Garda Bresciano for over 35 years, collecting all the natural and environmental qualities of the protected area, offering consumers cheeses and dairy products from certified milk supply chains, all within the Cooperative itself.
ALPE DEL GARDA: COOPERATION AS A WINNING SOLUTION
In 1980, a group of Breeders and Mountain Farmers founded a small Agricultural Cooperative and also built a Dairy Factory to process the milk produced by the existing cattle farms in the area. This new social organization of activities allowed for a new impetus to the local economy, becoming one of the main activities for the social structure of Tremosine, both then and now. All the cheeses from the Cooperative are derived from the milk transformation of its own Breeding Farm and those of the Members. The milk used exclusively comes from animals raised according to certified procedures and in compliance with the highest quality sanitary standards. The cheeses produced by Alpe del Garda exhibit the unique and typical characteristics of the mountainous area with green pastures, pure air, and cliffs overlooking the lake; it is in this dreamlike place that Alpe del Garda was born, where respect for this territory has become an increasingly important goal over the years.
ALPE DEL GARDA: ATTENTION TO MILK QUALITY
The Cooperative's choice to raise only Brown Swiss cows comes from a long experience in breeding cattle in mountainous areas, where the Brown breed is particularly suitable, and from a specific goal that aims to prioritize milk quality, despite the lower productivity per individual animal affecting the quantity. This breed is characterized by a great ability to adapt to any type of climate; its robust physical constitution allows it to be quite long-lived and significantly reduces the risk of diseases, easily coping with rather steep terrains, thus enabling grazing in mountainous areas with significant benefits for the environment and the preservation of high-altitude pastures. This particular breed also enjoys high fertility and an excellent protein/fat ratio in milk. Its musculature, characterized by a lack of fat infiltrations, allows for the production of high-quality meat, with fine grain and excellent organoleptic qualities. Breeders worldwide also use it to cross with other breeds to strengthen and improve their genetic characteristics. The Italian Brown stands out for its right balance between the quality and quantity of the milk produced, milk particularly suitable for cheesemaking. With its sweet, deep, and gentle gaze, and its extremely docile temperament, the Italian Brown combines an elegant and harmonious appearance with excellent structural solidity.
THE CHEESES OF ALPE DEL GARDA
The uniqueness and distinctive flavor of the dairy products from Alpe del Garda arise from the passion and tradition held within the hands of their cheesemakers, from the good milkof their Brown cows, from patience, dedication, and commitment that they bring to their craft every day. These are the ingredients that, over the days, weeks, and months, lead to the creation of their cheeses such as the Formagella Tremosine, a soft cheese with slight holes, pleasantly fragrant, and with a delicate aroma of mountain meadow essences. Expertly aged in rooms with selected molds to achieve a unique product, exquisitely good and with maximum digestibility.
