The members of the Gritti family are true pioneers in the production of aged buffalo cheeses. Over the years, they have enriched their selection with new products and innovations. Their high-level expertise and patents protect make the cheeses they produce unique and unreplicable. The meticulous and cyclical organization of the processes leads to the creation of about fifteen different types of buffalo cheeses. Internal control over raw materials and processes, combined with chemical and organic analyses in accredited laboratories, ensures the high quality of each product, generating a zero-kilometer supply chain with a low environmental impact, based on the principles of quality and circular economy.
Azienda Agricola Gritti: a story of breeders and innovation
At its origins in the '50s and '60s, the focus of the activity was based on the cultivation of agricultural lands; in 2000, a turning point occurred that led to innovating the primary idea, that is, enriching it with the breeding of Mediterranean buffaloes for the production of new cheeses, maintaining the propensity for innovation, attachment to the Bergamasca territory, and tradition. In these years of passionate work, they have raised and fed the buffaloes professionally, developing milk processing according to traditional standards. They raise a herd of a thousand Mediterranean buffaloes, of which 320 are dedicated to milk production. The breeding is directly managed by Alfio Gritti, a partner of the company and a highly experienced and professional veterinarian. The buffaloes follow a controlled diet, specifically designed to ensure their excellent health, thanks to forages produced on-site. Milking takes place in a quiet and peaceful environment, allowing the animals to experience milking with serenity. The milking room is directly connected to the dairy: the freshly milked milk, except for that destined for raw milk products, thus begins the pasteurization process. The typical sweet taste of buffalo milk, which characterizes it compared to cow's milk, gives its derivatives a distinguishable flavor that, thanks to the technical skill and artisanal knowledge of the master cheesemakers, makes buffalo cheeses unimitable.
