L&' Organic Extra Virgin Olive Oil from the Frantoio del Borgo line is obtained from the harvest carried out in the months of October and November. The harvest takes place using a shaker and comb with the olives falling on special sheets, collected and placed in boxes. They are taken to the mill, sorted and washed before final processing. The kneading takes place in closed and cleaned stainless steel tanks carefully between one processing and l&' another at a temperature that does not exceed 25 degrees. Finally, there is an extraction process with the latest generation centrifuges, which separate the oil from the oily must.
