The San Gregorio Agricultural Company was founded in 1952, by the breeder Giuseppe Rinaldini: the news concerning the farm on which it stands, however, is much older, dating back to the eighteenth century.
The first testimonies of the place are derived from an 18th century manuscript, kept at the Episcopal Curia of Montepulciano and which belonged to the Sisters of Chiusi, but the farthest roots of this wonderful territory are linked to the Etruscan era, recalling a past to be respected and valued.
Only at the end of the eighties did the company brand develop, which wants to represent an ideal of Tuscany based on local productions, from the vines to the breeding of Cinta Senese in the wild, started in the 2000s. Precisely for this reason, the products that identify the company are the Chianti dei Colli Senesi DOCG wine, derived from vines cured by hand one by one, and the cold cuts derived from Cinta, from sausages to seasoned raw ham, from loin to capocollo. San Gregorio Extra Virgin Olive Oil, derived from the olive trees that dot the rolling hills of Chiusi, deserves a separate mention

A DOP farm
Cinta Senese is not just any farm: recognized in 2012 as a protected designation of origin, it was probably already practiced in Roman times, although unequivocally attested starting from the Middle Ages. The most famous depiction of the pig with the black and white fleece is found in a well-known fresco from 1338, painted by Ambrogio Lorenzetti for the Palazzo Comunale di Siena: the image returns what is the salient feature of the appearance of this rustic breed, namely a white band (a girdle, in fact) placed on the front of
the body.
The Cinta Senese, however, is not only visually recognizable: its meats, in fact, are particularly tasty, have a better texture and a brighter color than those of other breeds, which is why they have been highly sought after over time. Unfortunately, these valuable points of Cinta meat put it at risk of extinction in the last twenty years of the twentieth century, a situation from which it has recovered only recently: in 2007 there were 210 farms, including that of the San Gregorio Company

Quality at the service of the consumer
A product is DOP or DOCG when it meets very high quality standards, to which the 120 hectares of land owned by the San Gregorio company align. Of these, 19 are cultivated with Sangiovese, Canaiolo and Colorino Toscano vines, which produce a maximum quantity of 80 quintals of grapes per hectare: it is possible to take a tour of the farm as well as the winery and the production plants, to be sure firsthand of the standards achieved
