In the late 1970s, Giovanni Fausto Bertolini felt the need to create something that would allow him to work with his family.

Thanks to his friendship with the Rana family, he asked the pastry chef Francesco if he could attend his workshop to learn the pastry-making art and later succeeded in opening his first pastry shop in Cologna Veneta, thanks also to the passion of his wife Patrizia and his dear mother Maria.

In Cologna, people began to request the typical product of the area: the mandorlato.

Giovanni Fausto Bertolini then started to produce "Finissimo Mandorlato," paying utmost attention to the selection of raw materials and being extremely careful in the various stages of processing.

The secret of this formula lies precisely in the dosing of ingredients and the meticulous attention to the cooking phase.

Even today, Giovanni Fausto Bertolini personally oversees the production of "Finissimo Mandorlato," assisted by his children, who are determined and proud to carry on their father's legacy.
