And did you know that spelt was the basis of the diet of the ancient Roman legions? Oh my, it’s not that eating it will help you conquer the world, but the fact that Roman soldiers consumed it means that the caloric content and nutrient supply of this grain are surely "tested" and of great complexity. Spelt is an ancient grain that is part of the tradition of many peoples and originates in Turkey. The gluten present in this grain, different from that found in wheat, is much more digestible. It is defined as white because it has been hulled and thus stripped of its hard "shell" which makes it particularly difficult to cook.
The story of Iris and Nicola is a beautiful love story that unfolded in the stunning Marche region, in the town of Fano. He was a sales agent, and she was an excellent cook with a special talent for rolling out pasta. No one could make it as thin as she did, and Nicola knew that well. It was his passion, and coming home meant falling in love with those magical hands that shaped extraordinary dough for unforgettable pappardelle and lasagna. In 1972, Nicola decided to open a shop right below their home, and from the very beginning, it became a must-visit spot for all the residents of Fano. From that little shop began the story of the Columbro pasta factory, which still offers products of the highest quality today. Their children recount that Iris would always pass through the laboratory among the mixers to give her famous "pinch," which marked the start of the dough's shaping and extrusion process. With that ancestral gesture, she knew how to test elasticity, blending, humidity, and all the characteristics of the finished product. From that pinch, the Columbro family has built their production philosophy. High technology, but at the same time, an awareness of tradition and a constant maintenance of primordial quality.
Spelt is a very rustic grain with a strong flavor. Ideal for complex sauces based on vegetables and particularly meat. Great with sauces made with Chianina IGP, and with Bolognese sauces. Less so with tomatoes and purees. We also recommend it with scialatielli and caciocavallo or it is excellent with grated Castelmagno DOP. A true grain!
