The Senatore Cappelli wheat is named after a senator of the Kingdom of Italy who, at the end of the nineteenth century, played a decisive role in the revitalization of agriculture in Puglia and the South in general. This process saw, among other things, the establishment of the Center for Cereal Cultivation in Foggia, where, in the early twentieth century, Nazareno Strampelli, an important biologist and geneticist, successfully selected this highly prized type of product from a North African wheat, Jenah Rhetifah. The semolina of Senatore Cappelli wheat is of the highest quality and, in a certain way, carries with it a high value of rusticity.
The products derived from it highlight an unmistakable and particularly intense flavor with a special sweetness. In short, it’s when they say that pasta... tastes like pasta! Ideal for heavy extrusions and thick pasta with a high degree of absorption of seasonings, particularly vegetable ones. It is the pasta of great international chefs and today, after some dark years, it has returned to the podium of Italian excellence envied all over the world.
The story of Iris and Nicola is a beautiful love story that unfolded in the stunning Marchigian lands of the town of Fano. He was a sales agent, and she was a talented cook with a special gift for rolling pasta. The way she made it was unmatched, and Nicola knew it well. It was his passion, and coming home meant falling in love with those magical hands that shaped extraordinary dough for unforgettable pappardelle and lasagna. In 1972, Nicola decided to open a shop right under their home, and it quickly became a must-visit for all the citizens of Fano. From that little shop began the story of the Columbro pasta factory, which still offers products of the highest quality today. The children recount that Iris would often walk through the laboratory among the mixers to give her famous "pinch," which signaled the start of the dough shaping and extrusion process. With that ancestral gesture, she could test the elasticity, blending, moisture, and all the characteristics of the finished product. From that pinch, the Columbro family has built its production philosophy. Highest technology but, at the same time, an awareness of tradition and a constant maintenance of primordial quality.

This grain works very well with short pasta and has a sweet and pleasantly "rustic" flavor. It feels like taking a leap into the ancient history of Italian pasta-making tradition. We recommend it with a great Italian tomato, the Pomodoro Piennolo del Vesuvio. Cut in half, placed in a pan with a bit of shallot, heated without cooking it too much. Finally served with some fresh basil leaves. A delight for the palate! It is also excellent with traditional Italian sauces based on vegetables, and the penne rigate offer a great result even with the red sauce made from Chianina IGP.
