The summer black truffle Tuber aestivum, also known as “scorzone”, grows abundantly in Umbria from late spring until mid-summer and early autumn.
It is harvested and cleaned for us by Tartufi Bianconi, who will ship it directly to your home.
On this page, we present it to you in quantities of 500 grams.
On the outside, the summer black truffle is rough, black in color with brown hues, and on the inside, it has a color ranging from brown to hazelnut with thin lighter veins.
Being a product that grows spontaneously, it can vary greatly in shape and size, and it may have external scratches or other imperfections which, on the other hand, certify its naturalness.
Another aspect to consider regarding quality is that the truffle reaches its full maturation typically starting from the second half of June. At the beginning of the month, it may be less fragrant and aromatic.
The summer black truffle, unlike the white one, has a longer shelf life and can easily last 7-10 days from harvest to consumption.

The summer black truffle is used to prepare delicious sauces to dress pasta or risottos, but it is also used to flavor cheeses and cold cuts. Great to put on soft fried eggs or poached eggs. Inside omelets with wild vegetables. Ideal for dressing grilled beef steaks. For fresh tagliolini and short pasta. To be paired with structured white wines and fresh red wines like Valpolicella Classico or Sangiovese from Maremma.
Availability and prices can vary greatly during the season, even weekly.
The single pieces of truffles can vary from 15 to 50 grams or more based on availability.
Orders are shipped directly from the producer from Monday to Thursday.
Fresh truffles will be shipped inside a patented polystyrene package specifically created to maintain their freshness and will be accompanied by a quality certification from mycologist Saverio Bianconi.
