The Piedmont Sausage is made from lean minced pork meat combined with a portion of fat (pancetta) using a medium-small grind, and then seasoned with salt and spices. It is subsequently wrapped in a natural sheep casing.
The meat comes from Gran Suino Padano breed pigs, born and raised in Italy, weighing between 144-176kg, sourced from farms certified by the Consortium of Parma Ham and the Consortium of San Daniele Ham.
This particular breed has meat rich in noble proteins and vitamins, is low in fats and cholesterol, and adheres to the principles of a balanced diet.
For the production of this sausage, the selected trimmings of the pig are used.
