The distillation of Prosecco pomace is a technique that tells the story of the Veneto lands where grappa has been part of the history of the people from Verona to Belluno. In particular, the refinement of distillation techniques was brought by the Austrians in the 1800s during their domination. More advanced distillation techniques that are still utilized today in their essential principles.
The Prosecco pomace comes from the hills of Valdobbiadene and typically after distillation leads to dry and very fresh grappas with a beautiful floral aroma. On the palate, it has a nice almond finish. It pairs well with dried sweets and as a digestif. Many also enjoy it in coffee.
